These Chocolate M&M Cookies have soft centers, crisp edges and they're loaded with three kinds of chocolate!

1/2 cup unsalted butter (softened but still cool )
1/3 cup granulated sugar
2/3 cup brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/4 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup M&M's (divided)
1/3 cup chocolate chips

Steps:

  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper (don't skip this step, it helps keep the cookies from spreading).
  • Using a hand mixer or stand mixer fitted with the paddle attachment, beat butter and sugars for several minutes, until light and fluffy. Add egg and vanilla, beat until combined.
  • In a separate bowl whisk flour, cocoa powder, baking soda and salt.
  • Add dry ingredients to butter mixture and beat until just combined. Use a rubber spatula to stir in chocolate chips and 1/2 cup M&M's. At this point, I like to let the dough rest at cool room temp for 30 minutes before baking (this helps with the texture of the cookies). If you prefer your cookies thick, you can transfer the dough to the refrigerator for 30 minutes.
  • Scoop the dough into 2-tablespoon portions, roll into balls and place a few inches apart on parchment lined baking sheets. Lightly press the remaining 1/4 cup M&M's onto the tops of the dough mounds.
  • Bake for 9-11* minutes, rotating the baking sheets from top to bottom and front to back. Bake until the edges are beginning to set, but the rest of the cookie is still slightly underdone. Note: They should be so soft that you should not be able to pick them up immediately after removing from the oven. They will set as the cool.
  • Place the baking sheet on wire rack to cool completely. Repeat with remaining dough, allowing the baking sheets to cool completely between batches.

A perfectly puffy chocolate chip recipe that has been modified to work at high altitude.

Number Of Ingredients 9

8 tablespoons salted butter (one stick)
1/2 cup white sugar
1/4 cup packed light brown sugar
2 teaspoons pure vanilla extract
1 large egg
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon table salt
2/3 cup your favorite chocolate chips (I like semi-sweet)

Steps:

  • Preheat the oven to 350F degrees.
  • In a small bowl, combine flour, baking soda and salt; set aside.
  • In a glass bowl, microwave the butter for about 40 seconds to just barely melt it. It shouldn't be hot - but it should well on it's way to liquid form; remove from microwave.
  • Using a stand mixer, beat the melted butter with both sugars until creamy about 3 minutes. Add the vanilla and the egg; beat on low speed until just incorporated.
  • Add the flour mixture and mix on low speed until a soft dough forms. Stir in the chocolate chips by hand with a large wooden or similar sturdy spoon.
  • Roll the dough into 16 largish balls and divide between two cookie sheets that have been lined with parchment or a silicone baking mat.
  • Bake for 9-11 minutes until the cookies look puffy and just barely golden. Take care not to over bake the cookies as they'll continue to bake as they cool on the pan. Let the cookies cool completely on the baking sheet before removing.
  • Store cookies in an airtight container on the counter or in the fridge- they're my favorite when just chilled! The cookies also freeze beautifully.

Sure, you could order online, but I'm not one to shell out $22.00 for four cookies. I'll just make my own, thankyouverymuch.

8 tbsp cold butter (cut into small cubes)
3/4 cup brown sugar
1 large egg (cold)
1 tsp vanilla extract
1 3/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
1 cup semi-sweet chocolate chips
1/2 cup toasted walnuts (optional)

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In the bowl of your stand mixer, beat together the cold butter and sugar until barely combined, about 1 minute on lowest speed. Do not beat until creamed or fluffy! Add the egg and vanilla and continue to beat until combined.
  • Mix together the dry ingredients and add them to the butter and sugar mixture. You should have a very stiff, lightly sticky dough. If needed, add another tablespoon of flour. Add the chocolate chips and nuts and mix until combined.
  • Measure out the dough in equal portions depending on the size you want them. Levain Bakery makes 6oz cookies, I made 3oz cookies. Place the cookies on your baking sheet and place the baking sheet in the refrigerator for 5 minutes to chill the dough again. This will help prevent the cookies from spreading.
  • Bake for 11-13 minutes or until the outsides are lightly browned and the insides are mostly done. Cool on a wire rack.

If you like nuts add a cup to the dough with the morsles. Also, you can multiply the recipe and freeze for baking later. Form the dough into balls and partially freeze on cookie sheet(this prevents cookie dough from sticking and freezing together). then you can put them into a freezer bag and enjoy them later. To keep soft cookies soft, put a slice of bread in the container you store the cookies in.

Steps:

  • Preheat the oven to 350 F. Line 2 baking sheets with parchment paper or silicone baking mats.

  • Whisk the butter until it is completely melted.

1 1/2 cups all purpose flour (see note)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter (softened but still cool )
1/2 cup granulated sugar
1/3 cup brown sugar, lightly packed (make sure it's fresh and soft)
1 large egg
2 teaspoons pure vanilla extract
1 1/2 cups M&M's or a mixture of M&M's and chocolate chips (divided )

Steps:

  • Preheat oven to 350°F. Line two baking sheets with silicone mats or parchment paper.
  • In a bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  • Using a hand mixer or stand mixer fitted with the paddle attachment, beat butter and both sugars for 2 minutes, until light and fluffy. Add egg and vanilla extract, mixing until combined, scraping the sides of the bowl as needed. On low speed, add in flour mixture and mix until just combined.
  • Gently stir in M&M's/chocolate chips - I usually add about 3/4 cup into the batter, the rest get pressed on top of the cookies before baking.
  • Scoop balls of dough, between 1.5 and 2.5 tablespoon portions (a little smaller or a little larger than a golf ball). Drop dough onto prepared baking sheets leaving an inch or two for spreading. I like to mound the dough balls so that they're higher rather than wider (for thicker cookies). Using the remaining M&M's/chocolate chips, nestle several (5 or so) onto the top of each mound of dough. Keep in mind that the cookies will spread out while baking, so be generous.
  • Bake for 8-11 minutes (see note), until the edges of the cookies are set but the center is still slightly underdone, this will create a soft cookie. For a crispier cookie, continue baking for another minute or two. See note about getting perfectly round cookies.
  • Place the baking sheets on wire racks and allow the cookies to cool completely. They will firm up as they cool.

1/2 cup white sugar
1 cup shortening
2 eggs
2 teaspoons vanilla
2 1/2 cups flour (+ 2-3 tablespoons)
1 teaspoon baking soda

Steps:

  • Preheat the oven to 350 degrees. In a large bowl, mix the brown sugar, white sugar, shortening, eggs, and vanilla with electric mixers on low speed until well mixed.
  • Add the 2 1/2 cups flour, baking soda, and salt. Mix until just combined; I found it easiest to finish this by hand. Add the extra tablespoons of flour until the dough feels thick and almost dry to the touch. Stir the M&M's into the dough.
  • Roll into large balls (unless you want small cookies, and who are you anyways?) and press extra M&M's into the tops. Flatten slightly with your palm or the back of a wooden spoon. Bake for 8-10 minutes (they will be slightly underbaked). Remove from cookie sheet right away and place on cooling rack. Let stand for 5-10 minutes to help the cookies hold their shape.
