Mom found this recipe in a bridal book years ago, and it soon became a family favorite. With tender juicy apples and a hint of cinnamon, it is yummy served plain or with a dollop of whipped cream or ice cream.

- In a large bowl, combine the apples, 1/4 cup sugar and 1 teaspoon cinnamon. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top. , Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400° for 40-45 minutes or until apples are tender. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking pan.
- Mix apple slices and applesauce together in a bowl. Whisk 1/2 cup melted butter and eggs together in a separate bowl; pour into apple mixture. Stir in brown sugar until well incorporated. Pour apple mixture into prepared baking pan.
- Mix bread crumbs, 1/2 cup butter, white sugar, and vanilla extract together in a bowl; sprinkle over apple mixture.
- Bake in the preheated oven until apples are tender and topping is lightly browned, about 30 minutes.

MOM'S APPLE COBBLER
This recipe originally appeared on the back of a Martha White flour sack many years ago. Out here in Washington, apples are plentiful, and this is one of our family favorites.

- Heat oven to 350 degrees. Melt butter in a 13x9x2 inch baking dish ( I prefer to use a glass one). Cut shortening into flour until particles resemble fine crumbs. Add milk and stir with a fork only until dough leaves the side of the bowl. Turn out dough onto a lightly floured board or pastry cloth, and knead just until smooth. Roll dough out into a large rectangle about 1/4 inch think. Sprinkle cinnamon over chopped apples, then sprinkle apples evenly over the dough. Roll up dough like a jelly roll and dampen the edges with water to seal. Slice dough into about 16 slices, 1/2 inch thick. Place slices in baking dish with the melted butter. In saucepan, heat water and sugar until dissolved. Pour the sugar syrup around the rolls. This will look like too much liquid, but dough will absorb it while baking. Bake for 55-60 minutes.
- VARIATION: This cobbler can also be made with other fresh, frozen, or canned fruits such as blackberries, cherries, or peaches. If the fruit is packed in liquid, drain and substitute for part of the water in the sugar syrup. Add enough water to make two cups of liquid.

- HEAT oven to 350º F. Place butter in 13 x 9-inch (3-quart) baking dish; place in oven to melt. Combine sugar and water in medium saucepan; heat until sugar dissolves, stirring frequently. Set aside.
- PLACE flour in medium bowl. Cut in shortening with pastry blender or fork until mixture resembles coarse crumbs. Add milk; stir with fork just until mixture begins to pull away from sides of bowl.
- KNEAD dough on lightly floured surface just until smooth. Roll out dough to 12 x 10 x 1/4-inch rectangle.
- COMBINE apples and cinnamon in medium bowl; stir to mix. Sprinkle apples evenly over dough. Beginning with long side, roll up jelly-roll fashion. Cut into 16 slices. Arrange slices in baking dish over melted butter. Pour sugar syrup carefully around and over rolls. (This looks like too much liquid, but crust will absorb it.)
- BAKE 40 to 45 minutes or until golden brown. Cool 15 minutes before serving.
- VARIATION
- APPLE RAISIN PECAN COBBLER: Sprinkle 1/2 cup raisins over melted butter in baking dish; arrange dough slices over raisins. Sprinkle top with 1/2 cup chopped pecans before baking.

It's more of a cobbler, but my mom calls it apple crisp. It's warm and flavorful, and I often eat the leftovers for breakfast - if there is any left!

- Preheat your oven to 350°F (325°F in a glass pan.).
- Slice apples in 9"x9" in square pan.
- Mix cinnamon and sugar. Add cinnamon mixture to apples.
- Add hot water. Dot with butter.
- Cover pan tightly with aluminum foil.
- Let simmer over very low heat (on stovetop) while preparing crust layer.
- Mix dry ingredients and add butter.
- Add beaten egg. Mix well.
- Finish mixing with fingers.
- Drop pieces of stiff batter onto the boiling apples. Spread out to make a layer.
- Bake for 30 minutes or until crust is light brown.

AMAZING APPLE COBBLER
A friend of mine gave me this recipe several years ago after she brought this wonderful dish for a potluck. When I made it at home, my mother was so impressed, she called my aunt to tell her about the recipe. Well, we were surprised to learn that my aunt already had the recipe and has used it for years- she got it off of a bag of Martha White flour! The original recipe calls for 2 cups of sugar, but we like it best with 1 1/2 cups. This isn't as hard to make as it sounds....promise :-)
