EASY OVEN OMELET
This is an easy omelet to make. I like making them during the week as they reheat nicely. I cut this in fourths and everyone can have a nice breakfast by placing it in the microwave to heat up. You can change this up. Use whatever veggies you have, bacon instead of ham or a different kind of cheese. The options are endless.

Steps:
- Beat eggs.
- Add all other ingredients to eggs and blend.
- Pour into an 8x8 greased baking dish.
- Bake at 350 for about forty minutes, or until set.
OMELETTE OVER EASY STYLE
I am not usually crazy about omlettes because I like the runny yolk of an over easy egg. With this omlette you'll get both... the delicious flavor of an omelette, with crispy sweet onion and cheese, and you'll also get the nice rich yolk of the egg running out of the omlette as you cut into it. Delicious!

Steps:
- Heat the oil in the skillet on medium high and place the onion in the skillet in a single layer to brown and crisp.
- Meanwhile, separate the eggs and set the yolk aside. Scramble the whites and season with salt and pepper to. taste.
- When the onions have browned and start to turn crisp, sprinkle half the cheese into the pan over the onions.
- Pour the scrambled egg white into the pan, and rotate to fully coat the bottom. Let the bottom set up, then while tilting the pan to the side, use the spatula to lift a portion of the cooked bottom so that the liquid mixture still on top will flow underneath and cook.
- Do this all around the skillet until there is very little liquid egg left on top.
- Sprinkle the rest of the cheese on top and gently add the yolk off center.
- Carefully lift up one edge of the omelet, and fold it over to the other edge, trapping the yolk inside.
- Let it heat a minute longer to warm to set the center, then slide the omelet onto your serving plate.

EASY EGG WHITE OMELETTE

Steps:
- Separate egg yolks from white and whisk egg whites in a jug, sprinkle in salt, pepper and parsley.
- Spray your frying pan with low fat cooking spray and pour in egg mix.
- Cook for 2/3 minutes until mixture is completely cooked on base.
- Pour in chopped onions and tomato on one half of the omelette and cook for a further minute.
- Fold omelette in half so that the tomatoes and onions are covered and omelette is in a semi circle shape.
- Flip over and cook until both sides of the semi circle until both sides are browned.
- Put on a plate and enjoy!

EASY OMELETTE FOR 2 OR 3, PAULA DEEN STYLE
This recipe comes from Paula Deen's " Paula's Home Cooking Show" These omelettes look so good and so simple to make that I had to keep her recipe, so I thought I'd save it here and share too. She used re-sealable plastic freezer baggies to prepare the omelettes.

- Bring a large pot of water to a boil.
- In a large bowl, whisk together 2 eggs at a time for each individual,salt and black pepper and any of your favorite add ins, (individually) and divided into each individual plastic freezer baggies.
- Seal each baggie tight.
- Smash with hands to combine the egg mixture.
- Drop each sealed baggie into the boiling water.
- Simmer the bags for 8 to 10 minutes or until done to your desire.
- Remove baggies from boiling water with tongs and drain on a paper towel lined plate or strainer.
- Cool slightly before handing.
- Open baggie and pour the cooked omelette onto each individual plate.
- Enjoy with along or with your favorite morning side dish, such as hashbrowns and grits.

- Crack the eggs into a bowl.
- Add anything else you would like in the omelet.
- Add the splash of milk and whisk until yolks are broken.
- Put the bowl in the microwave for 1 minute.(or longer depending on your watts).
- Check on the bowl every 30 seconds.
- Peel the string cheese.
- Take out the bowl and put the omelet on a plate.
- Sprinkle on the cheese and put in the microwave for 30 seconds so cheese can melt.
- Take out plate and drizzle on ketchup, hot sauce, or salsa.

BASIC OMELETTE
This is a very simple omelette for one. If you are going to add any fillings, make sure to prepare them ahead of time. Feta cheese and dill is a favourite of mine.

- Crack the eggs into a small bowl and whisk.
- Add some salt and pepper, if you like, but do not add any water, milk, or any other liquids.
- Heat the oil or butter in a 9-inch non-stick frying pan and pour in the eggs.
- In the first 30-seconds of cooking, use a spatula to create 6-10 small cuts through the omelette.
- This allows the uncooked egg on the top to flow down to the bottom of the pan.
- When the top is nearly set, sprinkle any fillings over half of the omelette and turn off the heat.
- Don't worry if some of the egg in the very centre isn't quite set, because the ambient heat will soon cook it.
- Use your spatula to flip one half of the omelette over the other and serve immediately.
