These savory dressed-up carrots add color to any meal-and do it with just five ingredients. "Use packaged baby carrots for added convenience," notes Lee Ann Arey of Scarborough, Maine.

2 pound baby carrots or medium carrots, quartered
1/4 cup water
1/4 cup butter
1 teaspoon dried oregano
1/2 teaspoon salt

Steps:

Place the carrots in an ungreased 9-in. square baking dish. Add water; dot with butter. Sprinkle with oregano and salt. Cover and bake at 325° for 1-1/4 hours or until tender.

Carrots were my favorite vegetable when I was very young. I used to like them mashed with butter. Here's another way that kids enjoy and can participate in making.

Ingredients

3 carrots
1 tablespoon butter
1 tablespoon honey
1 dash salt
3 tablespoons water

Steps:

Slice the carrots.
Combine all ingredients in a saucepan.
Cover and cook on medium low heat for about 30 minutes, until the carrots are tender.
Stir once in a while.
For the microwave:.
Use only 1 tablespoon water.
Put everything but the salt in a microwave safe bowl.
Cover lightly and microwave on high 6-7 minutes, until carrots are almost tender.
Make sure to stop the microwave and stir it a few times!
Stir in salt when carrots are done.
