5 cucumber slices
1/2 ounce simple syrup
2 ounces gin
3/4 ounce lime juice
Splash ginger beer
Rosemary sprig, for garnish

Steps:

Muddle 4 of the cucumber slices with the simple syrup. Add the gin and lime juice, and shake vigorously over ice. Strain into an iced highball glass. Top with a splash of ginger beer.
Spear the remaining cucumber slice with the sprig of rosemary to garnish the glass.

1 ½ fluid ounces tequila
¾ fluid ounce white creme de cacao
¾ fluid ounce lemon juice
1 cup ice cubes
2 fluid ounces framboise
3 fresh raspberries

Steps:

Combine tequila, creme de cacao, and lemon juice in a cocktail shaker. Add ice, cover and shake until chilled. Strain into a chilled cocktail glass. Pour framboise on top.
Garnish with 3 raspberries on a toothpick.

2 cups frozen strawberries
2 tablespoons white sugar

Steps:

Pour 1 cup ginger beer into a blender; add strawberries and sugar and blend until strawberries are pureed. Pour puree into a pitcher or punch bowl and stir in remaining ginger beer.

1 tub sorbet in each of these flavors: lemon, mango, raspberry, blackcurrant, or indeed any flavor you fancy
1 bottle Prosecco, or fizzy white wine
1 lemon, zested, to garnish
1/2 cup fresh mint sprigs, to garnish

Steps:

Fill the glasses with about 2 scoops of sorbet, each glass having a different flavor.
Top the glasses up with Prosecco, taking care that the fizz doesn't rise up and bubble over the top. Refill again once the bubbles have subsided, and then grate a little lemon zest over each glass and adorn with a small sprig of mint.

MIDNIGHT FIZZ

While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink's froth and avoid its inevitable separation.

2 ounces dry gin
3/4 ounce fresh lime juice
1/2 ounce simple syrup
1/2 ounce orange liqueur, such as Pierre Ferrand Dry Curaçao, Cointreau or triple sec
1 egg white
Ice
Soda water, chilled

Steps:

In a shaker, combine the gin, lime juice, simple syrup, orange liqueur and egg white. Cover and shake vigorously for 10 seconds. Add ice to the shaker, cover again and shake vigorously until chilled and well frothed, about 10 to 15 seconds more. Double-strain into a small Collins or fizz glass without ice and top with soda water. Serve immediately.
