FREEZE-AHEAD BREAKFAST HASH BROWNS
Don't feel like peeling potatoes to make hash browns for breakfast? No problem, make them ahead of time and freeze until you're ready to use them. A great way to always have homemade hash browns on hand.

- Peel and dice potatoes. In a large bowl, toss with olive oil (just enough to lightly coat) and season with salt and pepper. Place on a baking sheet so the cubes are all in a single layer. Bake at 425 degrees F for 20-25 minutes. Stir occasionally so the potatoes brown on all sides. Make sure to keep them in a single layer while cooking, however. Remove the baking sheet from the oven and let cool. Place the baking sheet in the freezer (or transfer potatoes to two smaller baking sheets or piece of parchment if your baking sheet won't fit in the freezer). Flash freeze until frozen solid, about 30-45 minutes, then place in a zip-top plastic bag. Press out as much air as possible and zip closed. Can be kept frozen for 3-4 months. To reheat: heat oven to 350 degrees F. Place frozen potatoes on baking sheet in a single layer and cook for 10 minutes, stirring occasionally, or until heated through. Can also be reheated in the microwave or a skillet on the stove top.
