¼ teaspoon oregano
1 tablespoon water
½ cup panko bread crumbs
½ pound 80% lean ground beef
1 (1.4 ounce) package dry French onion soup mix (such as Knorr®), divided
1 cup water, divided
1 tablespoon heavy whipping cream
½ cup grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Set a wire rack in a rimmed baking sheet.
  • Combine egg, oregano, and 1 tablespoon water in a bowl and beat to combine. Add in panko and ground beef. Sprinkle 1/2 of the French onion mix on top and mix until thoroughly combined. Shape mixture into meatballs. Place meatballs on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are cooked through, about 20 minutes.
  • Meanwhile, add remaining French onion mix to a saucepan over medium heat. Whisk in 1/4 cup water until well combined. Allow to thicken. Whisk in another 1/4 cup water and allow to thicken. Repeat 2 more times until water is used up. Mix in cream and Gruyere cheese, stirring until cheese is melted. Serve cheese sauce with meatballs.

1 pound ground beef
1 cup dry bread crumbs
1 small finely chopped onion
1 tablespoon minced garlic
1 (1 ounce) package dry French onion soup mix
2 large eggs
½ cup Italian dressing
1 tablespoon olive oil, or as needed

Steps:

  • Combine beef, bread crumbs, onion, garlic, and soup mix in a large bowl. Knead the mixture with your hands until well blended; it will be quite dry. Add eggs and Italian dressing and mix. Allow mixture to sit in the refrigerator 10 minutes.
  • Pinch off just enough of the meatball mixture to fit comfortably inside your palm, then roll to form a ball. Repeat with the remaining mixture.
  • Cover the bottom of a skillet lightly with olive oil and heat to medium-high. Add meatballs. Cook on one side for about 4 minutes, then turn and continue to cook until browned and no longer pink in the centers, about 4 minutes more. You may need to cook these in batches depending on how large your skillet is.

1 pound bacon, sliced into lardons
1/2 cup olive oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
1 tablespoon fresh rosemary leaves, minced
2 tablespoons brown sugar
1 1/2 glasses Chianti
3 tablespoons cider vinegar
1 small can tomato paste
1 small can chipotle peppers in adobo
3 (28-ounce) cans chopped tomatoes
Sea salt, preferable grey
Freshly ground black pepper
1 pound ground sirloin
1 large egg
1 tablespoon Worcestershire sauce
2 tablespoons Parmesan, freshly grated
2 tablespoons finely chopped flat-leaf parsley
1 teaspoons dried oregano
1 tablespoon finely chopped basil leaves
1 cup onion, finely chopped
1 cup fine dried bread crumbs
1 clove garlic, minced
Sea salt, preferably grey
Freshly ground black pepper
1 cup water

Steps:

  • Heat a large soup pot over medium-high heat. Add the olive oil and heat for 1 minute. When the oil is hot, add the bacon and render. When golden brown and beginning to crisp, add minced carrot, celery, onion, and garlic. Add a pinch of salt and saute vegetables to a light brown. Add rosemary and brown sugar and stir. Add Chianti and vinegar to pot, stir and bring to boil. Add the tomato paste, chipotles in adobo, and the chopped tomatoes. Stir and simmer for 1 to 1 1/2 hours, skimming the top occasionally to remove any scum that forms.
  • While the BBQ gravy is simmering, make the meatballs.
  • In a large bowl, mix together the meat, egg, Worcestershire, cheese, parsley, oregano, basil, onion, bread crumbs, and garlic, and season with salt and pepper. Add 1/2 cup of water. Knead the water into the meat mixture with your hands. Knead and roll meatballs into about 1 1/2-inch balls. Place them in shallow saucepan on stove, add another 1/2 cup of water over them, and cover. Turn heat to medium, and steam for 35 minutes.
  • Using a slotted spoon, remove the meatballs from the pan. Drain the juice out of the bottom of the pan, return the meatballs to it and cover them with warm BBQ gravy. Serve on top of Grilled Spaghetti.

Steps:

  • Preheat oven to 425°F (220°C).
  • In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.
  • Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.
  • Bake meatballs for 15 minutes, until golden brown. Set aside.
  • Add oil to a pan on medium-high heat, and cook onions and garlic until they are deeply caramelized.
  • Add in the cider vinegar, ketchup, tomato paste, mustard, Worcestershire, honey, brown sugar, stir, and bring to a simmer. About 5 minutes.
  • Add salt and pepper to taste (optional).
  • Add the cooked meatballs and coat them with the sauce.
  • Sprinkle with the fried onions, poke with toothpicks, and serve!

I LOVE old cookbooks, this comes from the 1970's a cookbook "Ground Beef and and Fry Pan Cooking." A simple meal that is fast to make (even faster if you pre-make your meatballs in the morning). Recipe includes a simple creamy sauce. I tweaked the overall recipe for my families taste.

1 kg ground beef (no fat)
1 large onion, chopped fine (I like to pre-fry mine)
1 teaspoon crushed garlic
1/2 cup dried breadcrumbs
2 tablespoons barbecue sauce
1/2 teaspoon mixed herbs
1/3 cup finely chopped ham
1 egg
1/3 cup butter
1 (425 g) can evaporated milk
1 tablespoon Worcestershire sauce
1/2 teaspoon celery salt (or celery powder)
1 tablespoon chopped parsley

Steps:

  • In a bowl mix the first 8 ingredients and form into 25 - 30 meatballs (about the size of a walnut).
  • In a large fry pan, heat the butter (the French cook mainly with butter - not oil and this really does make a BIG difference to the overall dish). Add the prepared meatballs (I try to make mine during the day so that dinner is on the table faster). Gently fry over a medium heat (don't burn your butter) for 10 - 15 minutes shaking your pan regularly to shift the meatballs to cook on all sides.
  • Reduce heat to low (once meatballs are ALMOST cooked through) and add the remaining ingredients. Simmer and shake the pan often for 5 minutes (sauce will thicken). Serve with buttered rice or mashed potatoes.

1.5 lb ground beef
3/4 cup Italian seasoned bread crumbs
1/4 cup grated parmesan cheese
1 tsp Italian seasoning
1 oz onion soup mix ((1 package) divided in half)
2 tbsp worcestershire sauce
2 eggs
1/4 cup milk
1 tbsp olive oil
2 large yellow onions
2 tbsp butter
3/4 cup beef broth or water
4 oz swiss cheese (sliced or shredded)

Steps:

  • Preheat the oven to 375˚F.
  • To make meatballs: Combine the ground beef, bread crumbs, parmesan cheese, Italian seasoning, half the onion soup mix (about 1 tbsp), worcestershire, milk and eggs.Roll into 18 meatballs, about 1.5-2 inches each.
  • Heat a large, oven proof skillet over medium high heat. Add the olive oil and once it is hot, lay the meatballs in the pan. Cook on each side for 2-3 minutes, or until seared. Then remove the meatballs from the skillet and set aside (they will finish cooking later.
  • Add the onions, butter, 1/4 cup broth, and remaining onion soup mix and reduce the heat to medium low. Allow the onions to cook for 8-12 minutes, stirring regularly. You can add broth as they cook to keep moisture in the skillet if needed. They should become translucent and caramelized once done.
  • Place the meatballs back into the skillet, add the remaining broth, and top with swiss cheese then bake in the oven for 10-15 minutes, or until meatballs are done (160˚F internal temperature.)Optional: Turn the oven to broil for the last 1-2 minutes of the cooking time to toast the cheese more heavily.
  • Once done, garnish with freshly chopped parsley and serve over thick sliced garlic toast, or mashed potatoes.
