¼ cup butter
3 onions, thinly sliced
1 teaspoon white sugar
1 tablespoon all-purpose flour
2 ½ cups water
½ cup red wine
2 (10.5 ounce) cans condensed beef broth
1 French baguette
8 ounces sliced Swiss cheese

Steps:

  • Melt butter or margarine in a 4 quart saucepan. Stir in sugar. Cook onions over medium heat for 10 minutes, or until golden brown.
  • Stir in flour until well blended with the onions and pan juices. Add water, wine, and beef broth; heat to boiling. Reduce heat to low. Cover soup, and simmer for 10 minutes.
  • Cut four 1 inch thick slices of bread from the loaf. Toast the bread slices at 325 degrees F (165 degrees C) just until browned, about 10 minutes. Reserve the remaining bread to serve with the soup.
  • Ladle soup into four 12 ounce, oven-safe bowls. Place 1 slice toasted bread on top of the soup in each bowl. Fold Swiss cheese slices, and fit onto toasted bread slices. Place soup bowls on a cookie sheet for easier handling.
  • Bake at 425 degrees F (220 degrees C) for 10 minutes, or just until cheese is melted

In my opinion, the key to a delicious French onion soup is a dark, savory broth, which you get from beef broth. If you want a vegetarian version, it can be hard to do with vegetable broth. To achieve the earthy tones I'm looking for, I've used a few nontraditional ingredients for this soup. I think it is a winner. -Paul DeBenedictis, Reading, Massachusetts

3 pounds yellow onions
1 pound sweet onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon brown sugar
1 teaspoon balsamic vinegar
1 tablespoon all-purpose flour
1 can (14-1/2 ounces) vegetable broth
1 can (12 ounces) beer or 12 ounces vegetable broth
1/4 cup white wine or additional vegetable broth
2 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons brandy
1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
6 slices French bread (1 inch thick)
6 slices Swiss cheese

Steps:

  • In a Dutch oven, saute onions in butter and oil until tender. Reduce heat to medium-low; cook for 1 hour or until golden brown, stirring occasionally. Stir in the thyme, brown sugar and vinegar., Combine the flour and broth until blended. Gradually stir into onion mixture. Stir in the beer, wine, soy sauce, Worcestershire sauce, brandy, pepper, salt and cayenne. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Meanwhile, place bread on a baking sheet. Broil 4 in. from the heat for 2 minutes on each side or until toasted. Top each with a cheese slice; broil for 2-3 minutes or until cheese is melted and lightly browned. Ladle soup into bowls; garnish with cheese-topped toast.

1 onion, sliced into thin rings
¼ cup margarine
2 (10.5 ounce) cans beef consomme
2 (10.5 ounce) cans beef broth
1 ½ cups water
¾ cup white wine
8 ounces sliced Swiss cheese
7 slices French bread

Steps:

  • In a large pot over medium high heat, saute the onions in the butter or margarine for about 5 minutes, or until tender. Add the consomme, broth, water and wine. Reduce heat to low and simmer for 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In individual oven-proof bowls, break up Swiss cheese slices and place one slice in the bottom of each bowl. Place one slice of bread on each slice of cheese. Ladle in the soup, place another slice of bread on top and cover with more Swiss cheese. Put bowls in the oven and allow cheese to melt on top.

1/2 cup unsalted butter
3 tablespoons all-purpose flour
2 large white onions, chopped into small pieces
4 cups homemade or low-sodium canned chicken stock
4 cups homemade or low-sodium canned beef stock
1 teaspoon salt
1/4 teaspoon freshly ground pepper
18 thin slices French baguette
2 cups shredded Swiss cheese (1/2 pound)

Steps:

  • In a large, heavy-bottom saucepan, melt the butter over medium heat. Add flour and chopped onions; saute, stirring occasionally, until onions are soft and translucent, about 15 minutes.
  • Pour chicken and beef stocks into the saucepan, and stir to combine. Bring mixture to a boil. Reduce heat to low, and simmer 15 minutes. Add salt and pepper.
  • Heat broiler. Ladle soup into six 16-ounce ovenproof bowls, and float 3 slices of bread on top of each. Sprinkle the cheese over bread slices in each bowl, dividing evenly. Place bowls on a rimmed baking sheet, and broil until cheese is melted and bubbling, about 2 minutes. Let soup cool slightly before serving.

1 dash nutmeg
7 cups beef broth
1/4 cup apple juice (optional)
6 slices French bread (dried in oven)

grated parmesan cheese

Steps:

  • Saute onion in butter until it is soft.
  • Then add sugar, salt, and nutmeg and toss in pan.
  • Turn down heat to still cook, but not to get onions dark, but golden brown.
  • Add hot broth and all other liquids.
  • Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Ladle soup into 6 ovenproof casserole dishes or pots and top each with a peice of french bread.
  • Put about 2 tbs of the swiss cheese on top and cook at 300 for 10 minutes.
  • Serve with additional swiss cheese and parmesan.

1 -2 tablespoon butter (softened for spreading)
1 1/2 cups grated swiss cheese

Steps:

  • Melt one tablespoon butter in a nonstick frying pan over low heat.
  • Add the onion and cook stirring occasionally (do not burn) until tender and a golden brown (approx 15-20 minutes).
  • Stir rosemary, salt and pepper into the onions and remove from heat.
  • Preheat oven to 375 degrees F.
  • Lightly butter one side of each slice of french bread.
  • Place the bread, butter side down, on a baking sheet.
  • Divide the onion evenly over the top of the french bread, coving as most of the surface as possible.
