Steps:
- Fries : Peel the potatoes and cut them in fries. Mix them with olive oil and salt and put them on a baking paper. Bake them 20 min at 430°F (220°C).
- Meat : Cook the onion in olive oil, when it's transluscent, add the ground beef + salt + pepper. Stir occasionally until it's cooked.
- Cheese sauce : Heat and boil the cream. Then, add the emmental cheese and the cheddar. Season with pepper. Thicken the sauce and blend it.
- Put two tortillas one on top of the other. Spread barbecue sauce (or ketchup..) in the center and put half of the fries on top.
- Add half of the cheese sauce and half of the meat. If everything is well centered it will me easier to fold ;-)
- Fold the borders one by one beginning by the top, then the one in front and finaly the two sides.
- Turn the french tacos and cook it in a panini grill during 3 minutes ( or in a pan 3 minutes on each sides ).
- Repeat with the second french tacos and that's it !
FRENCH TOAST TACOS

- In a large shallow dish, like a pie plate, whisk together the milk, egg, vanilla, cinnamon, & sugar. Dip the taco size flour tortillas in, one at a time, saturating both sides with French toast batter. Place the coated tortillas in a hot buttered skillet. Cook on each side for a couple minutes, until the French toast tortillas have lightly browned. Remove from the pan & set aside. I like to put mine on a wire rack lined baking sheet & I keep it in the oven at 200 degrees to keep them warm while I'm preparing the remaining tortillas & cooking my scrambled eggs.
- Fill your the French toast tortillas with warm scrambled eggs & bacon/sausage. Drizzle with syrup & top with chopped green onions. Serve immediately.
- **Increase your French toast batter as needed if you're serving a crowd. The batter recipe provided will make about 8 tacos.
FRENCH TOAST

- In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
- Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
- Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.
FRENCH TOAST SAUSAGE AND EGG TACOS
Classic egg sandwich meets classic French toast in our French Toast Sausage and Egg Tacos. We take flour tortillas, drown them in an easy French toast batter and cook them in just enough butter to turn them irresistibly golden and crisp. We layer them with melty American cheese, the softest custard-like scrambled eggs, and maple sausage for the perfect sweet and salty breakfast we're completely obsessed with. Bonus? This simple breakfast is only six ingredients!

- Add ¾ cup milk, 2 eggs, and maple syrup to a shallow dish or bowl. Whisk to combine.
- Add one tortilla in the mixture. Soak for 30 seconnds to one minute, making sure the whole tortilla is saturated.
- While the tortilla soak, heat a large non-stick skillet to a medium-high heat. Lightly coat with butter. (You will use 2 tablespoons of the butter to cook the tortillas so only use enough to lightly coat the pan each time.) When the skillet is hot, add the tortilla. Cook until golden brown, about 30 seconds to one minute. Flip and brown the other side. Remove from the pan and set aside. Repeat for remaining tortillas. Stack tortillas together on a plate or platter.
- While the tortillas brown, heat another large non-stick skillet to a medium-high heat. Add the sausage and cook until golden brown on all sides and hot throughout. Transfer to a plate or platter.
- While the sausage cooks, add the remaining 8 eggs, ¼ cup milk, and ½ teaspoon salt to a medium or large bowl. Whisk to combine.
- When the tortillas are all brown, cook the eggs. You want to cook the eggs at the last minute so they stay soft scrambled for serving. Heat the same skillet you cook the sausage or the tortillas in to medium-low. Add the remaining tablespoon butter. Once the butter melts, add the eggs. Let the eggs sit until they just start to cook on the bottom. Use a rubber spatula to gently start stirring the eggs. Continue to stir and gently scramble the eggs over a medium-low heat until they form large curdles. They're done when the eggs are still slightly wet. Immediately remove the skillet from the heat.
- To serve, lay a piece of cheese on the French toast tortillas. Spoon eggs on top followed by one or two links of maple sausage. Drizzle with maple syrup or serve on the side. Enjoy!

CLASSIC FRENCH TOAST
Here's a recipe for the kind of French toast people line up for outside restaurants on Sunday morning. It's simple: no new ingredients, tools or technology needed. You don't even need stale bread. What you do need is thick-cut white bread, dunked into an egg-milk mixture with extra richness from egg yolks and heavy cream. That gives the French toast a buttery taste and firm but fluffy texture. (Oversoaking is the enemy here; the mixture should fill the bread, not cause it to break.) For an appetizing, lacy brown crust, sprinkle on sugar toward the end of cooking: It will caramelize and turn glossy. Just make sure to keep the heat low after you add the sugar. Otherwise, it could burn quickly over high heat.

- Heat oven to 200 degrees, and place a wire rack on a sheet pan inside.
- In a shallow bowl, whisk the eggs, additional yolks, milk, vanilla (if using) and salt until foamy and smooth. Set aside. Place a small lump of butter (enough to coat the bottom of the skillet when melted) in a large, heavy nonstick skillet over low heat. It will melt very slowly.
- When butter is just melted and bubbling, raise heat and bring to a sizzle. Place 2 slices of bread in the bowl with the egg mixture. Turn them a few times in the mixture until evenly saturated, about 5 seconds on each side. Do not soak.
- Lift a slice out of the egg mixture, gently shake off any excess, and place in the pan. Repeat until the skillet is full, and let the slices cook at a sizzle for about 2 minutes, until just turning golden brown on the bottom.
- Add another small lump of butter to the pan and flip the slices over, swirling the pan so that the fresh butter coats the bottom. (This will allow the second side to brown.)
- Continue cooking over low heat until the second side is golden brown. Dust with cinnamon sugar, flip again, and dust the other side. Test for doneness by pressing the center: The dent should slowly spring back. If it remains, the interior is not yet cooked. Continue cooking at low heat, flipping occasionally, until done. Serve immediately, or transfer to the oven to keep warm while cooking remaining bread. Serve as soon as possible. Top with maple syrup, berries, jam, sliced bananas, orange supremes - whatever you'd like.

- Preheat the oven to 400 degrees F.
- To make the bacon: Lay the bacon on a baking sheet covered with nonstick mat or parchment paper. Sprinkle each piece of bacon with 1 teaspoon brown sugar. Drizzle the honey over the bacon and then sprinkle with cinnamon. Bake the bacon in the preheated oven until crispy, about 15 to 20 minutes.
- To make the ganache: While the bacon is cooking, make the ganache. In a small saucepan over low heat, bring the heavy cream to a simmer. Add the chopped chocolate and whisk until smooth. Remove from the heat, stir in the salt and pour into a bowl. Set aside.
- Remove the bacon from oven and cover to keep warm. Lower the oven temperature to 200 degrees F.
- To make the French toast: Whisk the eggs, milk, vanilla beans (pods and seeds), and sugar together. Lay the brioche slices in a baking dish and pour the egg mixture over the bread. Let the bread set for 10 minutes to absorb the liquid.
- Melt the butter in a large nonstick saute pan over medium heat. Gently add the egg-coated brioche to the pan and cook until golden on both sides, about 4 minutes per side. Transfer the toast to a baking sheet and keep warm in the oven until ready to serve.
- To make the garnish: In a bowl, gently stir the strawberries and sugar together and let set for 10 minutes.
- To make the whipped cream: Using a whisk or an electric hand mixer, whip the heavy cream for a few seconds and then add the confectioners' sugar and vanilla extract. Continue to whip the mixture to medium peaks and place in a serving bowl. Chill the whipped cream until ready to serve.
- Serve each piece of French toast with a slice of sweet bacon on top. Serve the toppings family-style. Hold a piece of toast in hand and top with a bacon slice and other toppings as you see fit. Fold the toast like a taco. Eating with your hands is highly recommended!
