These Fresh Spring Rolls are even better than you'd find at a restaurant, and they're easy to make and healthy!

1 package spring roll rice wrappers (, found in the Asian foods section at the grocery store)
1 package vermicelli rice noodles (, found in the Asian foods section at the grocery store)
2 mangos (, peeled and sliced into thin strips)
1 large carrot (, peeled and shredded or sliced into thin strips)
1 large English cucumber (, peeled and thinly sliced)
1 pound small, cooked shrimp (, deveined, tails removed, or substitute chicken)
1 bunch fresh mint leaves
1 bunch fresh basil leaves
1 bunch fresh cilantro
3/4 cup sweet chili sauce
1/3 cup peanut butter (, smooth or crunchy)
1/2 teaspoon low-sodium soy sauce
1/2 teaspoon hoisin sauce

Steps:

  • Cook vermicelli noodles in boiling water, for just a few minutes, according to package instructions. Drain and rinse with cold water.
  • Gather all topping ingredients together, including chopped veggies, herbs, cooked shrimp.
  • Add about 1 inch of water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for just 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate.
  • (It will soften up as you add the filling ingredients, but If you let it soak for too long it will get too soft and will tear when you roll it up.)
  • Layer 1-2 slices of each veggie, a few shrimp, a few leaves of each herb and a pinch of noodles on the 1/3 of the spring roll that is closest to you.
  • Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a burrito.

These spring rolls are a refreshing change from the usual fried variety, and have become a family favorite. They are great as a cool summertime appetizer, and are delicious dipped in one or both of the sauces.

2 ounces rice vermicelli
8 rice wrappers (8.5 inch diameter)
8 large cooked shrimp - peeled, deveined and cut in half
1 ⅓ tablespoons chopped fresh Thai basil
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
2 leaves lettuce, chopped
4 teaspoons fish sauce
¼ cup water
2 tablespoons fresh lime juice
1 clove garlic, minced
2 tablespoons white sugar
½ teaspoon garlic chili sauce
3 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts

Steps:

  • Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
  • Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
  • In a small bowl, mix the fish sauce, water, lime juice, garlic, sugar and chili sauce.
  • In another small bowl, mix the hoisin sauce and peanuts.
  • Serve rolled spring rolls with the fish sauce and hoisin sauce mixtures.

1 cup finely shredded cabbage
1 (6.5 ounce) can shrimp, rinsed and drained
⅓ cup sweet and sour sauce
⅓ cup minced celery
¼ cup shredded carrots
20 rice wrappers (6.5 inch diameter)

Steps:

  • In a medium bowl, mix the cabbage, shrimp, sweet and sour sauce, celery and carrots.
  • Fill a small bowl with hot water. Dip rice wrappers one at a time into the water. Allow wrappers to soften, then remove from the water and drain. As wrappers are removed from the water, fill each with 2 tablespoons of the cabbage mixture. Roll the wrappers and chill covered until serving.

These amazing, homemade Fresh Spring Rolls are healthy, easy to make, and are packed full of fresh vegetables.

8 rice paper sheets
8 large basil leaves (or cilantro)
6 large butter lettuce leaves
1 cup shredded carrots
1 red bell pepper (sliced thin)
¼ head red cabbage (shredded)
1 medium english cucumber (sliced into thin, 2-3" long matchsticks)
¼ cup green onion (sliced thin)

Steps:

  • Soften the Rice Paper: Submerge one sheet of rice paper at a time for 5 seconds to soften. Remove it and set aside for 10-15 seconds.
  • Assemble the Wrap: On the lower middle section of the rice paper wrap, place the ingredients. First, a basil leaf, a few pieces of lettuce and cucumber, carrots and bell pepper, some shredded cabbage, and some green onion.
  • Roll the Wraps: Bring up the smaller end of the rice paper to wrap tightly over the vegetables. Next, bring the sides of rice paper over. Roll tightly until you get to the end of rice paper wrapper. Repeat with remaining ingredients.
  • Serve: Serve with peanut sauce.

Number Of Ingredients 8

1/2 pound thin Vietnamese rice vermicelli
8 (8 1/2-inch) rice papers
8 large lettuce leaves, such as frisee, butter, or red oak
1/2 cup cilantro leaves
1/2 cup mint leaves
8 large shrimp, cooked, peeled, and halved lengthwise
24 fresh chives
Fish Sauce Dip (Nuoc Cham), for serving

Steps:

  • Bring a large pot of water to boil over high heat. Prepare an ice-water bath; set aside. Add vermicelli to boiling water and cook just until soft. Immediately transfer vermicelli to ice-water bath to cool. Drain and cover with a damp towel until ready to use.
  • Fill a clean spray bottle with water and mist the surface of the rice papers to moisten. Cover with a damp towel and set aside.
  • Place another damp towel on work surface. Lay one rice paper on top of towel. Place a lettuce leaf on the bottom third of the rice paper and top with 1/8 of the vermicelli, cilantro, and mint leaves. Roll rice paper away from you, about halfway, pressing down to form a tight cylinder. Fold about 1 1/2 inches from each side over the filling.
  • Place 2 shrimp halves, cut sides down, over the crease. Top with 3 chives so that about 4 inches of the chives stick out at one end. Continue rolling rice paper away from you to form a cylinder. Seal edges with a little water. Repeat entire process with remaining rice papers and filling.
  • Cut rolls in half and serve with fish sauce dip.

Spring rolls are always a great side to any Asian dish. They are also terrific when served alone as an appetizer. This recipe has just vegetables, but you could easily add any diced meat or seafood of your choosing. Once the spring rolls have been cooked, you can freeze them and reheat in a 350 oven for 20 minutes.

2 c cabbage, shredded
1/2 c carrots, shredded
1/4 c diced green peppers
3 green onions, diced
2 Tbsp soy sauce
1 tsp sesame oil
1 pkg egg roll wraps

Steps:

  • 1. Mix all ingredients except egg roll wraps together.
  • 2. Place one tablespoon of vegetable mix in the corner of a wrap.
  • 3. Fold the wrap like an envelope. When finished folding dab edges of wrap with water to seal.
  • 4. Lay assembled rolls out in single layer until finished with assembly.
  • 5. Fry approximately 3 minutes until golden.
