CHEESY PASTA BAKE WITH TOMATOES AND HAVARTI



Cheesy Pasta Bake with Tomatoes and Havarti image

A gooey, upscale mac and cheese with penne pasta and havarti cheese!

Number Of Ingredients 13

3 tablespoons olive oil
Large onion, chopped
2 cloves garlic, chopped
3 28-ounce cans whole tomatoes, drained and chopped
2 teaspoons dried basil
1/2-1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 cup chicken broth
1 pound penne pasta
10 ounces Havarti cheese, shredded
1/3 cup grated Parmesan
1/2 cup sliced black olives
Fresh basil, chopped, for garnish (optional)

Steps:

  • Heat olive oil in a large pot. Saute onion and garlic till onion is translucent.
  • Add tomatoes, basil, crushed red pepper flakes, and salt. Stir well. Add broth and bring to a simmer. Cook till liquid is reduced.
  • Check for seasonings and add more pepper flakes and salt if needed.
  • Cook pasta in well-salted water according to package instructions.
  • Drain well and mix into tomato sauce.
  • Add Havarti and toss till well combined.
  • Pour into a large, greased baking dish. Sprinkle with Parmesan, then olives.
  • Bake at 350º for about 20 minutes, till hot and bubbly. Sprinkle with basil if desired.

6 medium tomatoes, chopped
1 small onion, chopped
2 teaspoons sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the tomatoes, onion, sugar, salt and pepper. Transfer to a 2-qt. baking dish coated with cooking spray. Combine the bread crumbs, cheese and butter; sprinkle over tomato mixture. , Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

6 vine ripened tomatoes, sliced
1 tablespoon mayonnaise (such as Hellman's®)
1 cup shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a layer of tomato slices in an 8x8 inch baking pan. Spread a thin layer of mayonnaise on the tomatoes and sprinkle with about 1/4 of the Cheddar cheese and salt and pepper. Repeat layers, ending with the rest of the shredded cheese.
  • Bake until tomatoes are softened and cheese is melted and bubbly, 20 to 25 minutes.

1/2 cup butter
2 large onions, sliced, separate rings
6 oz package croutons (I use the ones in the box)
5 medium sized ripe tomatoes (sliced - not too thick)
1/2 teaspoon basil
Salt (to taste)
3 cups shredded Havarti cheese (it usually comes in a block you have to shred)

Steps:

  • 1. Preheat oven to 350 degrees F. In a large skillet, heat butter & sauté onions for about 5-6 min. Stir in croutons & sauté for another 3-4 min.
  • 2. In a greased 9 x 11 casserole dish layer in the following order: half crouton/onion mix, then half tomatoes, sprinkle with half the basil & salt, then half the cheese. Repeat once more.
  • 3. Bake for 35-40 min or until bubbly and cheese begins to get light brown.
