16 chicken legs and chicken thighs
2 c. low-fat buttermilk
Coarse salt
ground pepper
3 c. all-purpose flour
2 tbsp. sweet paprika
1 tbsp. finely chopped fresh rosemary leaves
4 sprig rosemary
2 c. vegetable oil

Steps:

  • Preheat oven to 450 degrees F, with racks in upper and lower thirds. Line one large rimmed baking sheet with aluminum foil; place a wire rack over a second rimmed baking sheet. In a large bowl, combine chicken, buttermilk, 1 teaspoon salt, and 1/2 teaspoon pepper; set aside (or refrigerate up to 2 days).
  • In another large bowl, whisk together flour, paprika, chopped rosemary, 1 tablespoon salt, and 2 teaspoons pepper. Lift chicken from buttermilk, a few pieces at a time (allowing excess to drip off), and dredge in flour mixture (shaking off excess); transfer to foil-lined sheet. Dredge chicken in flour mixture a second time; return to sheet.
  • In a 12-inch cast-iron skillet (or a 5-quart Dutch oven), heat oil and rosemary sprigs over medium-high. When rosemary sizzles rapidly, remove and discard. In three batches, fry chicken until golden brown, 4 to 5 minutes per side; transfer to prepared rack. (If chicken browns too quickly, reduce heat.)
  • Remove foil; set a rack on that baking sheet. Transfer half the chicken to this empty rack. Bake chicken on both racks until an instant-read thermometer inserted in thickest part of a thigh registers 165 degrees F, 15 to 20 minutes. Let cool 5 minutes before serving. (To store, let cool, then layer between paper towels; refrigerate up to 1 day. If desired, bring to room temperature before serving.) Looking for more chicken recipes? 1/2 quart buttermilk
1 tablespoon poultry seasoning
1 tablespoon salt
4 1/2 cups all-purpose flour
2 three-pound fryer chickens, cut into serving pieces
Vegetable oil for frying

Steps:

  • In a large bowl, combine the buttermilk and the poultry seasoning, 1/2 tablespoon of salt and 1/2 cup of flour. Mix well. Place 4 cups flour and 1/2 tablespoon of salt in another large bowl or baking pan. Dip chicken pieces in the batter then roll them in the flour.
  • In a deep pot, heat about three inches of oil to 350 degrees.
  • Drop the chicken pieces in the hot oil, several at a time, and cook about 15 minutes, or until dark-golden brown. Remove and drain on paper towels and keep warm before serving (the sooner served the better).

1 (3 to 4 pound) chicken, cut up into 10 pieces
Kosher salt
3 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons sweet paprika
2 teaspoons cayenne
Freshly ground black pepper
1 quart buttermilk
2 tablespoons hot chili sauce (recommended: Srirachi)
Peanut oil, for frying
1/4 bunch fresh thyme
3 big sprigs fresh rosemary
1/4 bunch fresh sage
1/2 head garlic, smashed, husk still attached
Lemon wedges, for serving

Steps:

  • Put the chicken pieces into a large bowl. Cover the chicken with water by 1 inch; add 1 tablespoon of salt for each quart of water used. Cover and refrigerate at least 2 hours or overnight.
  • In a large shallow platter, mix the flour, garlic powder, onion powder, paprika, and cayenne until well blended; season generously with salt and pepper. In another platter combine the buttermilk and hot sauce with a fork and season with salt and pepper.
  • Drain the chicken and pat it dry. Dredge the pieces, a few at a time, in the flour mixture,
  • then dip them into the buttermilk; dredge them again in the seasoned flour. Set aside and let the chicken rest while you prepare the oil.
  • Put about 3 inches of oil into a large deep pot; it should not come up more than half way. Add the thyme, rosemary, sage, and garlic to the cool oil and heat over medium-high heat until the oil registers 350 to 365 degrees F on one of those clip-on deep-fry thermometers. The herbs and garlic will perfume the oil with their flavor as the oil comes up to temperature.
  • Once the oil has reached 350 to 365 degrees F, working in batches, carefully add the chicken pieces 3 or 4 at a time. Fry, turning the pieces once, until golden brown and cooked through, about 12 minutes. Total cooking time should be about 30 minutes. When the chicken is done, take a big skimmer and remove the chicken pieces and herbs from the pot, shaking off as much oil as you can, and lay it on a tea towel or brown paper bag to soak up the oil. Sprinkle all over with more salt and a dusting of cracked black pepper. Repeat with the remaining chicken pieces. Once all the chicken is fried, scatter the fried herbs and garlic over the top. Serve hot, with big lemon wedges.

3 lbs chicken
4 sprigs fresh rosemary
10 leaves fresh sage
2 garlic cloves
fresh ground black pepper (20-30 turns pepper mill)
2 eggs
2 tablespoons extra virgin olive oil
3 teaspoons salt
10 ounces flour
2 quarts peanut oil, for deep-frying
1 -2 lemon

Steps:

  • Skin the chicken (optional) and cut it into small serving pieces using a heavy cleaver. Disjoint wings, thighs and drumsticks. Trim wing tips. Halve thighs and drumsticks. Seperate breasts from back and split breasts in half. Cut each half into 4-5 pieces (depending on size). Place all chicken pieces in a large bowl.
  • Prepare the marinade. Mince the rosemary, sage and garlic and add to the chicken pieces. Add the eggs, olive oil, salt and pepper.
  • Mix well, rubbing the chicken with the marinade. Let stand in the refridgerator for 4-6 hours.
  • Place flour on a tray. Dredge the chicken pieces in the flour. When the chicken pieces are completely coated with flour, squeeze the chicken pieces so as to press the flour up against them. You will have a lot of flour left over.
  • Heat the peanut oil in a deep fryer. The oil will have reached the right temperature when you place a small piece of bread in the oil and it sizzles immediately upon contact. Or when a thermometer reads 350°F.
  • Fry the chicken pieces in two batches. Do not overcrowd the fryer. In about 10 minutes the chicken pieces should be ready. Do not overcook the chicken or it will lose its moistness.
  • Take the chicken out of the oil with a slotted spoon and drain on paper towels. Sprinkle with salt.
  • Serve the chicken with lemon wedges.

I reduced the salt and the fat significantly - they used way too much then, in my opinion. Enjoyed in the Midwestern U.S. region at many church potlucks. (I attended quite a few personally!)

2 1/2 lbs frying chickens, cut in individual pieces
3/4 cup flour
1 teaspoon crumbled rosemary
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 teaspoon salt
1/4 cup shortening (I use olive oil)

Steps:

  • Wash chicken and dry.
  • Combine flour, rosemary, garlic powder, black pepper and salt.
  • Turn into a large bag.
  • Place all the chicken at once into the bag with the flour mix.
  • Shake until all pieces are coated well.
  • Melt shortening (or heat oil) in a 13X9X2 baking pan in a 400 preheated oven.
  • Arrange chicken in the hot fat in the pan, skin side down.
  • Bake 30 minutes or until the underside is golden brown.
  • Turn chicken and bake another 30- 40 minutes until done.

4 skinless, boneless chicken breast halves

  • Pour sauce over the pasta and chicken, and sprinkle remaining 1 cup Parmesan cheese on top.
