Pork Chops With Rice and Beans image

2 tablespoons extra-virgin olive oil
1 green bell pepper, diced
1 onion, diced
6 cloves garlic, chopped
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1 8-ounce can tomato sauce
1 cup converted (parboiled, not instant) white rice
1 15-ounce can black beans (not drained or rinsed)
8 thin boneless or bone-in pork chops (2 to 2 3/4 pounds)
1 tablespoon apple cider vinegar

Steps:

  • Preheat the broiler. Heat the olive oil in a medium pot over medium-high heat. Add the bell pepper, onion, garlic, cumin, salt and pepper and cook until slightly soft, about 3 minutes. Add the tomato sauce and 1/2 cup water and bring to a simmer.
  • Set aside about half of the tomato sauce mixture in a bowl. Add 3/4 cup more water and the rice to the pot and bring to a boil. Add the beans and their liquid, stir and reduce the heat to low. Cover and cook, undisturbed, until the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, 5 more minutes.
  • Meanwhile, pierce the pork chops with a fork and rub with the vinegar, and salt and pepper to taste. Arrange on a foil-lined broiler pan. Pour the reserved tomato mixture over the pork chops and turn to coat. Broil, without turning, until golden brown, about 8 minutes.
  • Fluff the rice and beans with a fork. Season with salt and pepper. Divide the pork chops and rice and beans among plates and drizzle with the broiler-pan juices.

3 tbsp. GOYA® Extra Virgin Olive Oil
1 tbsp. GOYA® Distilled White Vinegar
1 tsp. GOYA® Adobo All Purpose Seasoning with Pepper
1 tsp. GOYA® Minced Garlic
½ tsp. GOYA® Black Pepper
¼ tsp. GOYA® Whole Oregano Leaf
GOYA® Corn Oil, for frying
2 cups cooked GOYA® Medium Grain Rice
1 can (15.5 oz.) GOYA® Pink Beans in Sauce, heated according to package instructions

Steps:

  • Step 1 Add pork chops to non-aluminum container. Add olive oil, vinegar, Adobo, garlic, black pepper and oregano to container. Using hands, rub seasonings into pork. Cover; transfer to refrigerator. Marinate at least 2 hours, or up to 48 hours. Bring pork chops to room temperature 30 minutes before cooking. Step 2 Add 1½" corn oil to large, deep skillet. Heat oil over medium-high heat until hot, but not smoking. Add pork chops. Cook,. flipping once, until dark golden brown on both sides and cooked through (internal temperature of 150°F), 8-10 minutes total. Using tongs, transfer pork chops to paper towel-lined plate to drain. Step 3 Serve pork chops with rice and beans.

1 can (15 oz.) small red beans, undrained
2 tsp. oil, divided
8 boneless pork chops (2 lb.), 3/4 inch thick
1/4 cup KRAFT Honey Mustard Dressing
1 small green pepper, chopped
1 small onion, chopped
2 cloves garlic, minced
1-1/2 cups long-grain white rice, uncooked
1/4 cup raisins
1/2 tsp. ground cumin
2 slices OSCAR MAYER Bacon, cooked

Steps:

  • Drain beans, reserving liquid. Pour reserved liquid into 1-qt. measuring cup. Add enough water to reserved liquid to measure 3 cups.
  • Heat 1 tsp. oil in large skillet on medium heat. Add 4 chops; cook 4 min. on each side or until done (145°F). Remove chops from skillet; cover to keep warm. Repeat with remaining oil and chops.
  • Add dressing, peppers, onions and garlic to same skillet; cook and stir 5 min. or until vegetables are crisp-tender. Add rice; cook and stir 3 min. Add measured liquid; stir. Bring to boil; cover. Simmer on medium-low heat 15 min.
  • Stir beans, raisins and cumin into rice mixture; top with chops. Cover; simmer 5 min. or until liquid is absorbed, rice is tender and chops are heated through. Remove from heat. Sprinkle with bacon.

1/2 c reduced sodium soy sauce
1/8 c brown sugar
1/8 c honey
2 Tbsp lemon juice
2 Tbsp vegetable oil
1/2 tsp ground ginger
1/8 tsp garlic powder
4 boneless pork chops, cut into strips or bite-sized pieces
FOR RICE PORTION:
1 c brown rice, washed
2 tsp canola oil
3/4 c fresh mushrooms, sliced
2 clove fresh garlic, finely chopped
1/2 onion, chopped
1/3 c fresh carrots, julienned
1 c fresh broccoli, chopped
1/2 c frozen peas
1 c bean sprouts (mung beans)
1-2 scallions, chopped
1 Tbsp soy sauce
1/2 tsp ground ginger

Steps:

  • 1. Mix together in a bowl the soy sauce, honey, lemon juice, brown sugar, garlic powder and ground ginger. Reserve some of the mixture for cooking later, about 1/4 to 1/3 cup. Add pork pieces, mix until thoroughly coated. Cover and refrigerate several hours or overnight.
  • 2. Cook brown rice in 2 cups water with pinch of salt and dash of olive oil until done, about 45-50 minutes. Remove and spread out among 2 large dinner plates to cool. Cover and refrigerate several hours or overnight.
  • 3. Heat oil in large wok or frying pan (I use an electric pan) to medium/high heat. Discard marinade and cook pork pieces or strips 6 to 8 minutes, using reserved marinade to baste during cooking. Remove pork pieces to a plate and set aside.
  • 4. Using the same pan with remnants of pork marinade, cook mushrooms until moisture evaporates, remove to a separate plate and set aside. Add a little oil to the pan and cook broccoli and carrots about 5 minutes, covered. Remove to separate dish and set aside. Add a little oil to the pan. Using fingers, crumble cooked rice into hot pan to separate grains and stir to heat evenly. Add chopped onion, broccoli, mushrooms, peas and carrots. Cook about 5 minutes until vegetables begin to soften. Add pork mixture and bean sprouts and stir over medium heat until just combined and heated through. Sprinkle chopped scallions over top and serve.

3 c long grain rice, uncooked
1 can(s) tomato sauce 8 oz
1/3 c corn oil for cooking
1/2 c boneless smoked ham
1/4 c pimento olives
2 bouillon cubes chicken flavor
1 qt chicken stock
1 c water
2 pkg spanish seasoning w/ culantro and achiote ,annato
1 medium onion
1 small green pepper
1 small red bell peppers
3 clove garlic
1 bunch cilantro leaves
1 1/4 Tbsp adobo powdergoya w pepper
1 can(s) sweet pimento copped

Steps:

  • 1. First cut in cubes the smoke ham.
  • 2. Put aside chopped onion, red and green pepper, also mince garlic.
  • 3. In a cast iron pot about 4 quarts, put oil when hot put in ham let cook for 3 minutes then add onions, peppers and garlic. Also chop cilantro and put in pot to cook at medium heat.
  • 4. When tender add tomato sauce ,the sazon seasoning and adobo, pimento olive and the 2 cans of pink beans or small red beans stir put in the rice and chicken bouillon and chicken stock, make sure it does not have too much liquid.
  • 5. Cook in low heat cover tight or put aluminum first and cover and let cook for 30 minutes. When liquid is absorbed take large spoon for moving rice around and do it a few times.
  • 6. Then cover and cook for another 30 minutes. You will be smelling the aroma of your rice. Uncover and stir again and taste the rice to see if grain is fully cooked. If so cover shut the stove and now you are ready to enjoy your delicious Puerto Rican rice and beans. You could make pork chops or chicken and salad on the side. You won't regret doing this dish, bon appetite. Serves 8 or more depending on how you serve.
  • 7. This dish goes good with my flan as a dessert. Whatever you serve it with - enjoy my authentic Puerto Rican rice and beans!
