SOUTHWEST FRITO PIE

I got a real culture shock when we moved to New Mexico several years ago, but we grew to love the food. Now, back in South Carolina, we still crave New Mexican dishes, and this is one of my go-to favorites.-Janet Scoggins, North Augusta, South Carolina

Number Of Ingredients 13

2 pounds lean ground beef (90% lean)
3 tablespoons chili powder
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
2 cups water
1 can (15 ounces) pinto beans, rinsed and drained, optional
4-1/2 cups Fritos corn chips
2 cups shredded lettuce
1-1/2 cups shredded cheddar cheese
3/4 cup chopped tomatoes
6 tablespoons finely chopped onion
Optional: Sour cream and minced fresh cilantro

Steps:

  • In a 6-qt. stockpot, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Stir in chili powder, flour, salt and garlic powder until blended. Gradually stir in water and, if desired, beans., Bring to a boil. Reduce heat; simmer, uncovered, 12-15 minutes or until thickened, stirring occasionally., To serve, divide chips among 6 serving bowls. Top with beef mixture, lettuce, cheese, tomatoes and onion. If desired, top with sour cream and cilantro.

This is the original Frito Pie Recipe, created by the wife of one of the Frito executives in the 1950s. It's a classic, perfect football game food or anytime you want something that's quick and easy that the whole family will love. There are a lot of variations but this is the original!

8 ounces Fritos Corn Chips (, a little more wouldn't hurt)
48 ounces Wolf Brand Chili (, no beans)
1 large onion (, chopped)
2 cups Cheddar cheese (, shredded)

Steps:

  • Heat the chili until it is steaming hot.
  • Place Fritos in a lightly oiled casserole dish.
  • Cover with the chili.
  • Cover top with cheese.
  • Heat until cheese melts.
  • Serve sprinkled with onions and sour cream if desired.

8 cups West Texas Chili
2 cups (8 oz.) shredded sharp Cheddar cheese
½ cup diced white onion
Toppings: sour cream, sliced fresh jalapeño peppers

Steps:

  • Place 1 cup corn chips into each of 8 bowls. Ladle 1 cup West Texas Chili on top of corn chips in each bowl. Sprinkle each with ¼ cup Cheddar cheese and 1 tablespoon diced onion. Top with desired toppings.

I was first introduced to Frito Pie when I lived in Texas many years ago. It's still great comfort food for me - and now my grand kids love it too.

1 8-oz pkg fritos
1 15-oz can(s) chili beans
1 onion, chopped
1 15-oz can(s) chili (or make your own)
1 c sharp cheddar cheese, grated

Steps:

  • 1. Crush Fritos.
  • 2. Grease 7"x13" Pyrex baking dish.
  • 3. Place a layer (1/3) Fritos in bottom.
  • 4. Cover with 1/2 chili and then 1/2 beans.
  • 5. Sprinkle with 1/2 onions.
  • 6. Add another layer of Fritos and continue as above.
  • 7. Sprinkle remaining Fritos over the top then cover with grated cheese.
  • 8. Place in oven, 350F degrees, for about 30 minutes or until cheese has melted.
