Here's one pizza that won't be going anywhere near an oven! The ideal party dessert, this Frozen Dessert Pizza serves a dozen, deliciously.

18 vanilla creme-filled chocolate sandwich cookies, finely crushed (about 2 cups)
3 Tbsp. butter, melted
2-1/2 cups cold milk
2 pkg. (4-serving size each) cookies-and-creme flavored instant pudding mix
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 cups sliced strawberries

Steps:

  • Mix cookie crumbs and butter; press firmly into 12-inch pizza pan.
  • Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until well blended. Gently stir in half of the whipped topping. Spread over crust; cover with remaining whipped topping.
  • Freeze 3 hours or until firm. Arrange strawberries on top of pizza. Cut into 12 slices. Store leftover dessert in freezer.

1 store-bought pizza dough
Canola oil, for brushing
1 1/2 cups mascarpone cheese
2 tablespoons honey
2 plums, cut in wedges and grilled
1 cup raspberries
1 cup blackberries
Confectioners' sugar, for dusting

Steps:

  • Prepare the grill for direct and indirect cooking.
  • Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 seconds), stretch and shape the dough into a 12-inch round on a flat surface. Brush the top with oil and toss on the grill, oil-side down. Cook until the bottom is golden brown, 1 minute. Check the bottom of the dough to see if it is getting browned. If it is on one part, but not the other, use a spatula or tongs to rotate the dough 90 degrees and cook for another minute. If it is still not beginning to brown, cover the grill and continue to cook a minute at a time until the bottom has browned evenly. (It should only take a couple minutes if you have a hot grill.) The top of the pizza dough will also start bubbling up with air pockets.
  • Once the pizza dough has browned on the bottom, flip over and grill until golden brown and the dough is just firm, another minute or so. Remove to a sheet pan. Cover the grill so it retains the heat for the next step.
  • Combine the mascarpone cheese and honey. Smear the mascarpone over the pizza and scatter the plum wedges and berries on top. Put the pizza on the sheet pan back on the grill, close the cover and cook just to warm the fruit, about 2 minutes. Dust with confectioners' sugar and serve immediately.

Yield Makes 4 eight-inch pizzas

Number Of Ingredients 8

1 cup warm (110 degrees) water
1/4 teaspoon sugar
1 package (1/4-ounce) active dry yeast
2 3/4 to 3 1/4 cups all-purpose flour
1 teaspoon coarse salt
1 1/2 tablespoons olive oil, plus more for bowl and parchment paper
Cornmeal, for pizza peel or baking sheet
Assorted toppings, such as cheese, caramelized onions, roasted tomatoes, thinly sliced artichoke hearts, pine nuts, and sauted mushrooms

Steps:

  • Pour 1 cup warm water into a small bowl. Add sugar, and sprinkle in the yeast. Using a fork, stir the mixture until the yeast is dissolved and the water has turned tan. Let stand until foamy, about 10 minutes. In a food processor fitted with the metal blade, combine 2 3/4 cups flour and the salt, and pulse 3 to 4 times. Add the yeast mixture and the olive oil. Pulse until the dough comes together, adding more flour as needed until the dough is smooth, not tacky, when squeezed. Transfer to a clean work surface, knead four or five turns and shape into a ball.
  • Place the dough in a lightly oiled bowl, smooth side up. Cover tightly with plastic wrap. Let the dough rise in a warm place until doubled in size, about 1 hour. Remove the plastic wrap and place your fist in the center of the dough to punch down. Fold the dough back onto itself four or five times.
  • Divide the dough into four equal portions, and roll each into an 8-inch round. Stack the rounds, separated by lightly oiled sheets of parchment paper, then double wrap the stack tightly with plastic wrap, and freeze.
  • Preheat the oven to 500 degrees with a pizza stone on lowest rack. Remove dough from freezer, and let stand at room temperature until thawed, about 30 minutes. Sprinkle cornmeal on a pizza peel or inverted baking sheet. Place dough rounds on top, and cover with toppings, as desired.
  • Slide rounds onto pizza stone, and bake until crust is crisp and golden and toppings are bubbling, 5 to 7 minutes. Remove from oven; serve immediately.

A delightful addition to that Friday night family pizza. Found this at Guide to Southern Food. If using fresh strawberries, mash, sprinkle with sugar, cover, refrigerate for 2 hours, and add 1/4 cup water when cooking. I had unsweetened frozen strawberries and added 3 packets of splenda while cooking.

1/4 cup confectioners' sugar
1 cup self-rising flour
8 ounces cream cheese
1 (14 ounce) can sweetened condensed milk
1/3 cup lemon juice

2 pints frozen strawberries, in juice
4 tablespoons cornstarch

Steps:

  • CRUST.
  • Melt butter, mix with confectioners sugar.
  • Add flour, mix well.
  • Pat out in pizza pan.
  • Bake at 350 for about 15 minutes, until lightly browned.
  • FILLING.
  • Beat cream cheese and condensed milk together.
  • Add lemon juice and vanilla.
  • Pour over cooked crust.
  • TOPPING.
  • Combine frozen strawberries and cornstarch in medium saucepan (or fresh, mashed, sugared strawberries, 2 tablespoons water and cornstarch).
  • Cook over medium heat, stirring, until thickened (about 5 minutes).
  • Cool and spread over cream cheese filling.
  • Refrigerate at least 4 hours.

I'm not saying that a coffee granita is the best frozen dessert ever, and I'm not saying this is the best coffee dessert ever, but this might be the best frozen coffee dessert ever. The technique could not be any easier. Serve in a clear glass garnished with sweetened whipped cream and a pinch of cocoa.

3 cups prepared strong black coffee
¾ cup white sugar
2 tablespoons coffee-flavored liqueur

Steps:

  • Combine coffee, sugar, and coffee liqueur in a bowl with a whisk until sugar dissolves.
  • Pour mixture into an 8x12- or 9x13-inch dish. Freeze, uncovered, until it just starts to get slushy around the outside, about 1 hour and 15 minutes.
  • Take a fork and break the frozen pieces up, stirring into the liquid. Crush any large pieces with the back of the fork.
  • Return to the freezer and repeat the process every 30 minutes until you've reached your desired consistency, about 4 to 5 times total.
  • Serve immediately or return to the freezer and chill for 8 hours, or overnight, before serving for best results.

500g pack bread mix or pizza base mix
little plain flour , for rolling
6 tbsp tomato pasta sauce or passata
small bunch basil leaves , shredded
18 cherry tomatoes , halved
250g ball mozzarella torn (dry well with kitchen paper, to keep the base crispy)
25g parmesan (or vegetarian alternative), grated

Steps:

  • Make up the bread dough following pack instructions, and transfer to an oiled bowl to rise for about 1 hr.
  • Knock back in the bowl by squashing all the air out of the dough with your fist. Divide the dough into 6 and roll each one on a lightly floured surface to a circle about 18cm in diameter. Put dough you're not using under a damp tea towel or oiled cling film to stop it drying out.
  • Put the pizza bases on large oiled baking sheets - you may need 2 or 3. Spread 1 tbsp sauce or passata on each base, then scatter on the basil, tomatoes, mozzarella and Parmesan (or whatever you fancy). You can freeze the pizzas now, if you like, on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.
