Hot outside? Enjoy a chilled creamy whipped-cream dessert that takes full advantage of the season's fresh fruit.

2 cups Original Bisquick™ mix
2 tablespoons sugar
1/4 cup butter or margarine (firm)
2 packages (3 ounces each) cream cheese, softened
1 cup sugar
1 teaspoon vanilla
2 cups whipping (heavy) cream
2 cups miniature marshmallows
4 cups mixed fresh fruit

Steps:

Heat oven to 375°F. Mix Bisquick and 2 tablespoons sugar in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture is crumbly. Press in bottom of ungreased square pan, 9x9x2 inches.
Bake 15 to 20 minutes or until light brown; cool.
Stir together cream cheese, 1 cup sugar and the vanilla in large bowl; set aside. Beat whipping cream in chilled large bowl with electric mixer on high speed until stiff. Gently stir whipped cream and marshmallows into cream cheese mixture; spread over crust.
Cover and refrigerate at least 4 hours until firm. Cut into 3 rows by 3 rows; top each serving with fruit. Store covered in refrigerator.

1 can (20 ounces) pineapple chunks, drained
1 can (16 ounces) fruit cocktail, drained
1 can (16 ounces) sliced pears, drained and cut into chunks
1 can (15 ounces) mandarin oranges, drained
1 jar (10 ounces) maraschino cherries, drained
1 carton (12 ounces) frozen whipped topping, thawed
2 cups sour cream
1/2 cup sugar
1 tablespoon lemon juice
Dash salt
1/2 cup chopped walnuts

Steps:

Combine all the fruit in a large bowl. In another bowl, combine whipped topping, sour cream, sugar, lemon juice and salt; fold into fruit mixture. Chill. Just before serving, stir in nuts.

1 package (1 ounce) sugar-free instant white chocolate or vanilla pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 can (11 ounces) mandarin oranges, drained
1/2 cup halved seedless red grapes

Steps:

In a large bowl, whisk the yogurt and pudding mix for 2 minutes or until thickened. Fold in whipped topping. Fold in the fruit. Refrigerate until serving.

1 (.3-oz.) pkg. sugar free lemon gelatin
1 (12.75 oz.) jar Smucker's® Apricot Sugar Free Preserves
1 (8 oz.) container sugar free frozen whipped topping, thawed

Steps:

PLACE pineapple with juice in microwave-safe medium bowl. Microwave on HIGH for 1 minute. Add both flavors gelatin powder and stir for 1 minute or until dissolved. Chill 15 minutes.
STIR in preserves. Fold in 2 cups whipped topping. Chill for 1 hour or until firm.
SERVE in small custard cups topped with a dollop of whipped topping.

1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple tidbits, drained
6 ounces (1/2 jar) of Maraschino Cherries, drained and chopped
1 cup miniature marshmallows
1 (8 ounce) tub Cool Whip (or less) (or 2 cups real whipped cream)

Steps:

In a serving bowl combine drained oranges, drained pineapple, drained and chopped maraschino cherries & marshmallows. Gently mix. Add Cool Whip and gently fold until combined. Serve immediately.
