From the Sharp Carousel Microwave Cookbook, 1981. I used cherry Koolaid to frost white cupcakes. It was yummy. This would be good for any holiday.

1/3 cup margarine, softened
1 1/2 teaspoons lemon juice
1 dash salt
2 tablespoons sweetened Kool-Aid drink mix (any fruit flavor)
3 cups powdered sugar
1/4 cup milk
1/2 cup chopped nuts (optional)

Steps:

  • Beat margarine until light and fluffy. Stir in lemon juice, salt and Kool-aid. Beat in powdered sugar until smooth.
  • Place milk in 1 cup measure. Microwave on medium high until very warm, 30 to 45 seconds. Add milk to frosting, 1 tablespoon at a time; beat until frosting is desired consistency. Stir in chopped nuts.
  • Fills and frosts 2 (9 inch) layers or a 9 x 13 inch cake.

This silky frosting relies on all of the natural sweetness in dates and cream - so there's no added refined sugar! The recipe makes enough to frost 12 cupcakes or one small cake.

Yield About 1 1/2 cups (enough for 12 cupcakes)

Number Of Ingredients 4

10 pitted Medjool dates, chopped
2 ounces unsweetened chocolate, roughly chopped
1 cup heavy cream
2 tablespoons unsweetened cocoa powder

Steps:

  • Soak the date pieces in very hot water until very soft, about 5 minutes. Drain and transfer to a food processor. Put the chocolate in a small microwave-safe bowl and heat for 30 second increments, stirring after each, until melted and smooth. Add to the dates along with the heavy cream and cocoa powder. Process until light and smooth.

Number Of Ingredients 6

1/2 cup plus 1 tablespoon whole milk, at room temperature
1 tablespoon plus 3/4 teaspoon vanilla extract, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice, at room temperature
1/2 teaspoon finely grated lemon zest
1 1/2 pounds unsalted butter, at room temperature
4 1/2 cups confectioner's sugar

Steps:

  • In a small bowl, whisk together the milk, vanilla, lemon juice, and zest.
  • In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer and a bowl, combine the butter and sugar and mix on low until incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
  • Reduce the speed of the mixer to low. Add the milk mixture in 3 batches, waiting for each batch to be fully incorporated before adding the next (scrape the bowl down occasionally). Raise the speed to high and mix briefly until fluffy. Use as desired. May be stored, covered, in the refrigerator for 3 days.
