Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

4 boneless chicken breasts
1-1/2 cups white rice
1-1/2 cans cream of mushroom soup
3/4 cup mayonnaise
1 cup chopped celery
1 jar (8 oz.) pimento
1 Tbsp chopped onion
1 tsp red cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup cheddar cheese

Steps:

  • Boil chicken breast until tender and cut into pieces. Cook rice as directed on box and drain.
  • Mix all above ingredients except cheddar cheese in a bowl and add chicken. Pour mixture in a casserole dish and bake for 45 minutes.
  • The last ten minutes of baking, add cheese for topping.

1 (6 ounce) package seasoned stuffing mix
1 cup water
1/4 cup butter, melted
2 1/2 cups chicken, cooked
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup mayonnaise
3/4 teaspoon salt
2 eggs, slightly beaten
1 1/2 cups milk
1 (10 3/4 ounce) can cream of chicken soup
3 cups cheddar cheese, grated

Steps:

  • Mix the stuffing mix, water, and butter together.
  • Put half of the mix into a casserole dish.
  • Now, mix the chicken, onion, celery, and mayonnaise together.
  • Sprinkle with salt and pour it in the dish, on top of the bread mixture.
  • Now combine the rest of the stuffing mixture with the eggs and milk and pour on top.
  • Refrigerate overnight.
  • Take out casserole 1 hour before baking and spread chicken soup over the top.
  • Bake this uncovered at 350 for 40 minutes.
  • Now, remove the casserole from the oven and coat the top heavily with your grated cheese.
  • Put it bake in the oven for another 10 minutes, or until the cheese melts.

1 cup chopped celery
1 tablespoon butter
2 cups cubed cooked chicken
1-1/2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3/4 cup mayonnaise
1 can (8 ounces) sliced water chestnuts; drained
1/2 cup sliced almonds
2 tablespoons chopped onion
Salt and pepper to taste
TOPPING:
1 tablespoon butter, melted
1/2 cup crushed cornflakes
Sliced almonds, optional

Steps:

  • In a skillet, saute celery in butter until tender. Remove from the heat; add the next nine ingredients. Spoon into an ungreased 2-1/2-qt. baking dish. , Combine melted butter and cornflakes; sprinkle on top of casserole. Sprinkle with almonds if desired. Bake, uncovered, at 350° for 30 minutes.

2 -3 cups cooked chicken, chopped
1/2 cup chopped celery
2 tablespoons chopped onions
1/2 cup low-fat mayonnaise or 1/2 cup mayonnaise
1/2 cup low-fat sour cream or 1/2 cup sour cream
1/4 cup egg substitute or 1 whole egg
1 (8 ounce) can sliced water chestnuts, chopped
2 cups cooked rice (white, brown, wild, or mixture)
1 can 98% fat-free cream of chicken soup, undiluted
1/2 teaspoon salt (optional)
1/2 teaspoon pepper
1 cup crushed corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • Spray 2-quart casserole with non-stick cooking spray.
  • Mix all casserole ingredients together and spoon into casserole.
  • Bake 25-30 minutes.
  • Sprinkle cornflakes on top.
  • Spray top with non-stick cooking spray.
  • Return casserole to oven and cook an additional 10-15 minutes until casserole is bubbling hot and topping is lightly browned.
