Steps:
- For the cookies: Whisk the flour, baking soda, pumpkin pie spice, and salt together in a medium bowl.
- Beat the butter in a large bowl with a handheld mixer until fluffy. Scrape down the sides of the bowl, add the sugars, and continue beating until light, about 3 minutes. Add egg and vanilla extract, beating until smooth. Gradually add the dry ingredients while mixing slowly to make a smooth dough. Divide dough in half and press each half into a disk. Wrap in plastic wrap and refrigerate until firm, at least 1 hour.
- Transfer 1 disk of dough to a floured work surface and roll about 1/4-inch thick. Cut into cookies with a pinched tuna can (see below). Transfer cookies with an offset spatula to a nonstick or silicon lined baking sheet.
- Cut out eyes and a mouth with a pastry tip, fat straw, or a knife. Press the lollipop sticks into the narrow end of each cookie, if using. Repeat with remaining dough. Press excess dough together, roll and cut into cookies. Refrigerate cookies for at least 30 minutes.
- Evenly space the racks in the oven and preheat to 350 degrees F. Put the candies in a small plastic bag and hit with a rolling pin to break into little pieces.
- Bake the cookies just until they are set, about 20 minutes. Remove baking sheets from the oven and carefully sprinkle the broken candies into the eyes and mouth of the cookies. Continue to cook until the candy liquefies, about 3 minutes more. Cool cookies on pan for 10 minutes before removing from the pan. Cool cookies on a rack.
- For the icing: Whisk the water, egg white powder and orange extract in a medium bowl until foamy but smooth. Gradually whisk in the confectioners' sugar to make a smooth icing. Spread a layer of icing over the entire surface of the cookies with the back of a teaspoon. Let rest until the icing sets, about 30 minutes. Serve or store in a covered container for up to 3 days.

FRUIT & SPICE COOKIES
My childhood holiday seasons were always filled with Grandma Kenrick's infamous "Christmas rocks." These cookies looked a little like rocks, but they were sweet and chewy, and they had the perfect amount of spice. They were so delicious that this was the first recipe I modified to be free of eggs, processed sugar, and oil. This sugar-free fruit version is sweetened with apples, strawberries, and dates! With this healthy-tasty combo, these cookies are perfect to enjoy all year long. From Plant-Based Katie This recipe is also available in our convenient iPhone and Android apps.

Steps:
- Preheat the oven to 375°F. Line two baking sheets with parchment paper. Mix 1½ cups of the rolled oats, the baking powder, and the spices (cinnamon, nutmeg, and cloves) in a large bowl and set aside.
- In either a blender or food processor, combine the ground flaxseed, ¾ cup water, applesauce, and the remaining 1½ cups of rolled oats. Process until the batter has an even consistency. Then, add the strawberry jam, and blend for a few seconds to combine.
- Pour the fruit mixture into the bowl of dry ingredients. Whisk until everything is evenly mixed. Then stir in the dates and pecans. The mixture should be slightly wet; don't expect to shape the cookies into balls.
- Drop 12 spoonfuls of dough onto each baking sheet. Bake for 15 to 20 minutes. Let the cookies cool for a few minutes and then enjoy warm! Store any uneaten cookies in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 6 days.

WHOLE-WHEAT FLAX, FRUIT, AND SPICE COOKIES
I'm not especially into sweets but I have gotten really addicted to these little cookies off the side of a box of Uncle Sam cereal. (I'm assuming it's only available in the US, but it's a low-glycemic index cereal made of little whole-grain wheat crisps..bigger than a rice krispy, small than a flake..and flax seeds. You might be able to substitute a combo of wheat/bran flakes and flax seeds if it isn't in stores near you.) This is NOT an especially sweet cookie, with only 1/5 c. sugar per dozen cookies. It's more like a chewy little health food treat - a cake like cookie with crunchy bits of flax and wheat grains in it. But my kids love them and don't seem to notice they aren't sugar-laden. If you want, you could add 1/2 c brown sugar to sweeten them up a bit, or some honey or maple syrup. You can also add a bit of nutmeg or ginger to perk up the spices. I vary the kinds of dried fruit I add (dates and dried cranberries are great; my kids also like a combo of regular raisins and golden raisins), and sometimes throw in a little wheat germ, sunflower seeds, etc. I have also subbed half of the oil with applesauce to reduce the fat content. I sometimes grab a few for breakfast on the run. If you're looking for a chewy, non-sugary snack that personalizes well to your own taste, this may be the one!
