1 cup water
2 ½ cups fat-free milk, divided
1 ¼ cups old-fashioned rolled oats
1 pinch Pinch of salt
1 large pear, cored and cut into 1/4-inch pieces*
½ cup dried sweetened cranberries
¼ cup dark or golden raisins
½ cup chopped walnuts (MUFA)
2 teaspoons brown sugar

Steps:

  • Bring water and 1 1/2 cups of the milk to a boil in large, heavy saucepan over high heat. Stir in oats and salt (if using). Reduce heat to medium-low and simmer 3 minutes, stirring often, until oats start to soften.
  • Stir in pear. Cover and simmer about 3 minutes more or until it is tender but still a bit crisp. Stir in cranberries and raisins. Remove from heat, cover, and let stand 1 minute to soften.
  • Divide evenly among 4 warm bowls. Sprinkle each with 2 tablespoons of the walnuts and 1/2 teaspoon of the sugar. Top each bowl with 1/4 cup of the remaining milk.

This is one of my favorite recipes because it is light and very tasty. I had one of my family members try it and she thought it was so good that it was a recipe from a published cookbook. It is the best sweet sandwich you will ever taste! Perfect for all ages.

½ apple, cored and diced
½ banana, sliced
¼ cup apple juice
1 tablespoon strawberry jam
2 tablespoons peanut butter
2 slices whole-wheat bread, toasted

Steps:

  • Mix apple, banana, apple juice, and strawberry jam together in a bowl.
  • Spread peanut butter on both slices of bread. Top one piece of bread with fruit mixture. Place second slice of bread over the fruit mixture.

It's a highly nutritious healthy food, easy to make and long lasting. SATTU means a mixture of seven whole grains. My fore fathers use to take this complete food while traveling. Originally from north Indian villages, SATTU is Excellent for growing kids.

250 g wheat
250 g barley
250 g millet
250 g oats (cereal)
250 g indian chickpeas (gram)
250 g corn
100 g soybeans
sugar or honey
cold milk or water
almonds or nuts, etc

Steps:

  • Dry and Roast all grains separately.
  • Mix together and grind them into fine flour.
  • Let it cool and store in an airtight jar.
  • SATTU is ready.
  • TO SERVE:.
  • Mix 2 tblsp of SATTU with 100ml cold water or milk to make a viscous liquid ( like batter).
  • Add sugar or honey and mix well.
  • Garnish with dry nuts to your choice.
  • Serve cold in a bowl.
  • You may also add pieces of fruits - apples, bananas, grapes, etc.
