THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

After all, barbecuing in Southern California isn't just for summer.When you cook a turkey on the barbecue, you not only get moist, wonderfully flavored meat, you free up space in your oven, which means you don't have to leave so much cooking for the last minute.Our menu, dreamed up by our cooking school interns, Andy Broder and Rommel Delos Santos, starts with Honey-Glazed Soybeans and cool, crisp White Sangria With Pomegranate Ice Cubes. Set out with a bowl of mixed nuts, the soybeans, which we're seeing more and more in supermarkets--offer great munching while final touches are made on the meal.Next comes autumn-colored Butternut Squash Soup, flavored with bacon and a little carrot and bell pepper.The turkey, stuffed with citrus for flavor and cooked right on the barbecue, is pure California eating. We serve it with grilled vegetables instead of the usual green beans, Parmesan-Crusted Potatoes instead of mashed potatoes, Savory Applesauce and Cranberry-Orange Relish instead of straight cranberry sauce, and an untraditional but wonderful stuffing made with croissants, French bread, dried cherries and toasted pumpkin seeds.For dessert, we have two sweets. One, Pumpkin Cheesecake With Caramelized Pecans, is a terrific alternative to plain pumpkin pie. Baked Persimmons With Muscat Wine and Creme Frai^che is a lovely way to end the meal, like baked apples with more depth.It's a nonconformist meal in style, but at heart it's as satisfying as any traditional turkey dinner.

Steps:
- Combine wine and Port in small saucepan and reduce by half over medium-high heat, about 5 minutes.
- While wine is reducing, peel all but 1 apple. After peeling, quarter, core and seed all apples, including unpeeled apple.
- Chop all apples in batches in food processor, pulsing to prevent over-processing. Repeat as often as needed to coarsely chop all apples. Stir in lemon juice.
- Add butter, cinnamon, sugar and raisins to reduced wine and Port. Add salt. Stir until sugar dissolves, about 5 minutes.
- Add chopped apples and stir until well combined. Cover and simmer until apples are tender, about 20 minutes. Stir every few minutes.
- Serve warm.
SAVORY APPLESAUCE
A hint of horseradish makes this savory applesauce a delicious condiment for pork dishes.

- Peel, core, and cut apples into 1/2-inch-thick slices. In a large saucepan, combine apples with cinnamon, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
- Remove from heat; discard cinnamon stick. Stir lemon juice and horseradish. Season with coarse salt and ground pepper.
SAVORY APPLESAUCE

- Simmer all ingredients in a 3-quart heavy saucepan, covered, stirring occasionally, until apples fall apart and garlic is tender, about 15 minutes. Mash garlic into applesauce. Season with salt and pepper.
SAVORY APPLESAUCE
Steps:
- In large, heavy-bottomed stock pot, combine apples, sugar, lemon juice, ginger, cloves, and 1 cup water. Cover and set over high heat. Bring to boil, then reduce heat to moderate and simmer, covered, stirring occasionally, until apples are very soft, about 20 minutes.
- Remove from heat and blend with whisk, breaking up any remaining apple pieces. Pass through ricer, food mill, or fine-mesh strainer. While applesauce is still warm, stir in sprigs of savory. Let applesauce cool, then remove savory before serving.
SAVORY APPLESAUCE (ACCOMPANIMENT TO PORK CHOPS)
Make this only if you are a garlic-lover! This is a double recipe, it will make about 4 cups, as I always make lots and then freeze in 1/2-cup plastic containers to serve with pork chops, it can be reduced by half if desired.
