Ingredients

2 cups all-purpose flour
2 tablespoons salt
2 tablespoons pepper
1 tablespoon dried thyme
1 tablespoon dried tarragon
1 tablespoon ground ginger
1 tablespoon ground mustard
1 teaspoon garlic salt
1 teaspoon dried oregano
2 large eggs
1/2 cup milk
1 broiler/fryer chicken (2-1/2 to 3-1/2 pounds), cut up
Oil for frying

Steps:

Combine the first nine ingredients; store in an airtight container. Yield: 2-1/2 cups coating mix (enough for 3 batches of chicken)., To prepare chicken: In a shallow bowl, beat eggs and milk. Place 3/4 cup coating mix in a large resealable plastic bag. Dip chicken into egg mixture, then add to the bag, a few pieces at a time; shake to coat. , Heat 1/4 in. of oil in a skillet over medium-high heat. Brown chicken on all sides; transfer to an ungreased 15x10x1-in. baking pan. , Bake, uncovered, at 350° for 45-55 minutes or until juices run clear.

1 tablespoon paprika
1 teaspoon chili powder
1 teaspoon celery salt
1 teaspoon black pepper

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

Sift ingredients together and stor in an airtight container.
Use to dust or dredge fish, chicken or vegetables for frying.
Mix with buttermilk or beer to make deep fry batter.

1 1/2 cups cornmeal
1/4 cup flour
1 tablespoon lemon pepper seasoning
2 teaspoons salt
1 teaspoon onion powder
1/2 teaspoon paprika
fish (fillets work best)
buttermilk
oil

Steps:

Combine first 6 ingredients. This may be stored in an airtight container in the freezer. Mix before using to redistribute the seasonings.
To make fried fish; dip fish in buttermilk, then roll in coating mix. Heat approximately 3" oil in a large skillet to 375°F Fry one piece at a time until golden brown, 4-6 minutes.
