MILLY'S OATMEAL BROWNIES
These are wonderful, chewy 'brownies' except that they are made with oatmeal instead of chocolate. Add your favorites (nuts, chocolate chips, chocolate candies, toffee chips) and create a truly delicious snack.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
- Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

- Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
- Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
- In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
- Whisk in the melted chocolate (make sure it's not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
- Fold in the chocolate chunks, then transfer the batter to the prepared baking dish.
- Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
- Slice, then serve with a nice cold glass of milk!

- In a large bowl, combine the oats, flour, brown sugar, baking soda and salt. Stir in butter until combined. Press into an ungreased 13x9-in. baking pan. Bake at 350° for 10-11 minutes or until puffed and edges are lightly browned. , Meanwhile, prepare brownie mix according to package directions for cakelike brownies. Spread batter over crust. - Preheat oven to 350 degrees F.
- Grease 8X8X2 inch pan.
- Melt chocolate with margarine in small heavy saucepan over very low heat or in double boiler.
- Remover from heat; blend. Reserve.
- Combine oats, wheat germ, nonfat dry milk, baking poder, salt (you can add 1/2 cup chopped walnuts if you like) in medium size bowl. Mix well. Reserve.
- Beat eggs in medium size bowl until light.
- Gradually beat in both sugars and vanilla until mixture is thick.
- Stir in chocolate mixture; fold in oat mixture. Spread batter in pan.
- Bake at 350 for 20-25 minutes or until toothpick inserted into the middle comes out clean and the top is crips and edges firm.
- Cool in pan on rack. Cover with foil, and refrigerate overnight.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix oats, 3/4 cup flour, brown sugar, baking soda, and 1/4 teaspoon salt together in a bowl. Stir 3/4 cup melted butter into oat mixture until evenly coated. Measure 3/4 cup oat mixture and reserve for later. Press remaining oat mixture into the prepared baking dish.

- Melt chocolate chips and butter in the microwave about 45 seconds; stirring occasionally until completely melted; set aside.
- Combine the dry ingredients, except for sugar, in a bowl.

- Stir in chocolate mixture and then the dry ingredients.
