2 ounces apple chips (I used fresh apples)
Dressing
2 tablespoons frozen apple juice concentrate
1 tablespoon apple cider vinegar
1 tablespoon white balsamic vinegar
1 teaspoon dijon style mustard
1/4 teaspoon garlic
1/3 cup olive oil

Steps:

  • Toss mixed greens, rotisserie chicken, blue cheese, walnuts and apple chips together in a large salad bowl. Whisk together remaining ingredients and pour over salad. Serve immediately. 1 teaspoon prepared mustard (such as Dijon)
1 tablespoon finely grated lemon zest
2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup walnut pieces
1 cup cored and chopped apple
2 tablespoons italian seasoning, spice blend or 2 tablespoons dried dill
1 cup cooked chicken breast strips (use leftovers)

Steps:

  • To make dressing: In a medium bowl, combine the lemon zest, yogurt, oil, mustard, vinegar, lemon, salt and pepper, and mix well.
  • To make salad:In another bowl medium bowl, combine the walnuts, apples chunks, dill and cooked chicken, and set aside. Pour the dressing onto the apple mixture right before serving, and stir until blended. Arrange on serving plates and serve chilled.

4 slices thick-cut bacon, diced
2 Fuji apples
5 ounces arugula
3/4 cup unsalted roasted pecan halves
1/4 cup plain whole-milk yogurt
2 teaspoons chopped flat-leaf parsley
2 tablespoons extra-virgin olive oil
1 tablespoon pure maple syrup
2 teaspoons fresh lemon juice
1 clove garlic, pressed
Pinch each of kosher salt and freshly ground black pepper

Steps:

  • Prepare the salad: Heat a medium skillet over medium high heat. Add the bacon and cook, stirring often, until just crisp, 8 to 10 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate. Meanwhile, halve and core the apples, then thinly slice. Transfer to a large bowl.
  • Make the dressing: Combine all of the ingredients in a jar or container with a lid. Cover and shake to combine.
  • Finish the salad: Add the arugula, pecans and bacon to the large bowl. Add as much dressing as you like, toss to coat and serve.
