I have four gardens, including one just for herbs, so I always have a pretty good spread of produce. I created this loaded-up pizza as a fun summer appetizer using some of my best garden goodies. -Dianna Wara, Washington, Illinois

3 tablespoons olive oil
3 garlic cloves, minced
3 medium tomatoes, cut into 1/2-inch slices
1 large sweet red pepper, halved, stemmed and seeded
1 small zucchini, cut lengthwise into 1/4-inch slices
1 small onion, cut crosswise into 1/2-inch slices
1 teaspoon coarsely ground pepper
1 prebaked 12-inch pizza crust
1/3 cup spreadable garden vegetable cream cheese
8 slices smoked provolone cheese, divided
1/2 cup minced fresh basil, divided
1/4 cup shredded carrots
1 tablespoon minced fresh oregano
1 teaspoon minced fresh thyme

Steps:

  • Mix oil and garlic; brush onto both sides of vegetables. Sprinkle with pepper. Grill, covered, over medium heat until tender, 4-5 minutes per side for pepper and onion, 3-4 minutes per side for zucchini, 2-3 minutes per side for tomatoes., Coarsely chop pepper, onion and zucchini. Spread pizza crust with cream cheese; layer with 4 slices provolone and tomato slices. Sprinkle with 1/4 cup basil, carrots, oregano and thyme. Top with grilled vegetables, then remaining cheese., Grill pizza, covered, over medium heat until bottom is golden brown and cheese is melted, 5-7 minutes. Top with remaining basil.

3 cherry tomatoes, halved
2 fresh basil leaves, torn
1/8 tsp. black pepper
2 slices multi-grain bread
2 KRAFT Singles
2 tsp. unsalted butter, softened

Steps:

  • Combine first 3 ingredients. Top 1 bread slice with 1 Singles; cover with tomato mixture, second Singles and remaining bread slice.
  • Spread outside of sandwich with butter.
  • Cook in skillet on medium heat 3 min. on each side or until golden brown on both sides.

A hearty, grown-up grilled cheese that will make your mouth sing!

2 slices bread (I used sourdough)
Butter
4 oz. cheese (I used a mild gruyere)
1 Tomato
1/2 Avocado
1/2 yellow onion, caramelized
Handful microgreens of your choice

Steps:

  • Preheat cast iron skillet over medium heat Butter one side of the two pieces of bread Place buttered piece of bread face down in skillet Top with cheese Add caramelized onion, avocado and tomato Top with more cheese Place other piece of bread with buttered side up on top and flip once browned Toast the other side for a few minutes until done Remove from heat and gently open up sandwich and stuff with microgreens Press sandwich together, slice and serve.

Cheddar & Chutney Grilled Cheese image

12 (1/4-inch-thick) slices good bakery white bread
1/4 pound (1 stick) unsalted butter, melted
1 (8.5-ounce) jar mango chutney, such as Stonewall Kitchen
3 cups grated extra-sharp white Cheddar (8 ounces) (see Cook's Note)

Steps:

  • Lay 6 slices of the bread on a cutting board and brush each slice generously with the butter. Turn the slices over and spread each one with 1 1/2 tablespoons of the chutney. Place 1/2 cup of the Cheddar evenly on each slice and place the remaining 6 slices of bread on top of each sandwich. Brush the tops generously with melted butter.
  • Heat a panini press (see Cook's Note) and grill the sandwiches according to the directions for the machine, until the bread is nicely browned on both sides and the Cheddar is starting to melt.
  • Place the sandwiches on a cutting board and cut each one in half diagonally. Serve hot.

2 tablespoons Vegan Thousand Island Dressing
1/2 red bell pepper, sliced thin
1/2 avocado, sliced thin
1 large roma tomato, sliced
3-4 leaves iceberg lettuce

Steps:

  • Preheat oven to 350 °F. Line baking sheets with parchment.
  • Place bread slices on baking sheet.
  • Spread one slice with 1 tablespoon thousand island dressing, arrange cheese on the other slice.
  • Arrange bell pepper slices on one bread, tomato slices on the other.
  • Warm in oven for 7-9 minutes, until cheese is melted.
  • Remove from oven, drizzle another tablespoon of thousand island (optional) onto the melted cheese.
  • Top with avocado slices and lettuce, finishing with the other slice of bread.
  • Serve immediately.

This is a low good fat version of a grilled cheese seasoned with fresh and dried herbs and garden fresh tomatoes. I used a regular pan but for ease you can use a nonstick pan.

1 teaspoon olive oil
1 pinch dried Italian seasoning
1 1/2 ounces sliced low-fat cheese
2 slices fresh tomatoes
2 -4 fresh basil leaves

  • Mix oil and dried herbs and spread on 1 side of both slices of bread.
  • Preheat non stick pan to medium heat.
  • Seasoned side down add slice of cheese, tomato, fresh ground pepper, basil and other slice of cheese topping with second slice of bread seasoned side up.
  • Place in pan with a weight on it and cook for 1 minute till browned flip and cook for an other minute till cheese is melted.

1/2 teaspoon sea salt or kosher salt
1 loaf (1 pound) frozen pizza dough, thawed
2 tablespoons olive oil, divided
1/2 cup shredded Parmesan or Asiago cheese
1/2 cup fresh or frozen corn, thawed
1/4 cup thinly sliced red onion
8 ounces fresh mozzarella cheese, sliced
1/2 cup thinly sliced fresh spinach
3 tablespoons chopped fresh basil

Steps:

  • Sprinkle tomatoes with salt; set aside. On a lightly floured surface, divide dough in half. Roll or press each to 1/4-in. thickness; place each on a greased sheet of foil (about 10 in. square). Brush tops with 1 tablespoon oil., Carefully invert crusts onto a grill rack, removing foil. Brush tops with remaining oil. Grill, covered, over medium heat until bottom is golden brown, 2-3 minutes. Remove from grill; reduce grill temperature to low., Top grilled sides of crusts with Parmesan or Asiago cheese, tomatoes, corn, onion and mozzarella cheese.
