A fantastic sandwich with sliced turkey, guacamole, toasted whole wheat bread, fresh tomato, lettuce, bean sprouts, yellow mustard and light mayo. For cheese lovers, Colby-Jack makes a great addition as well. No one I know can resist this one!

2 slices whole wheat bread, toasted
1 tablespoon mayonnaise
2 teaspoons Dijon-style prepared mustard
3 slices smoked turkey breast
2 tablespoons guacamole
½ cup mixed salad greens
¼ cup bean sprouts
¼ avocado - peeled, pitted and sliced
3 ounces Colby-Monterey Jack cheese, sliced
2 slices tomato

Steps:

  • Spread mayonnaise on one slice of toast, then spread mustard on the other. Arrange the sliced turkey on one side. Spread guacamole over the turkey. Pile on the salad greens, bean sprouts, avocado and cheese. Finish with tomato slices, then place the remaining slice of toast on top.

1/2 cup mayonnaise
1 teaspoon finely grated lemon zest, plus 3 tablespoons fresh lemon juice
1/4 teaspoon freshly ground pepper
2 cups diced roast turkey (a mixture of white and dark meat)
1 large stalk celery, finely diced (about 1/2 cup), plus 1/4 cup chopped celery leaves or parsley
1/2 cup diced peeled green apple, such as Granny Smith or Mutsu
1/4 cup chopped golden raisins
3 tablespoons extra-virgin olive oil
6 thin slices rustic bread, toasted
Seedless cucumber, very thinly sliced, and watercress, for serving

Steps:

  • In a bowl, mix together mayonnaise, lemon zest, 1 tablespoon lemon juice, and pepper. In another bowl, mix together turkey, celery and leaves, apple, raisins, remaining 2 tablespoons lemon juice, oil, and 2 tablespoons of mayonnaise mixture.
  • Spread each bread slice with about 1 tablespoon mayonnaise mixture. Top with turkey salad, dividing evenly. Garnish with cucumber and watercress.

1 pound uncooked turkey breast slices, about 1/4 inch thick
1/2 cup shredded Cheddar cheese (2 ounces)
4 tablespoons sandwich spread, mayonnaise or salad dressing
4 slices pumpernickel bread, toasted

Steps:

  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook frozen stir-fry vegetables in skillet 3 to 5 minutes, stirring frequently, until tender. Remove vegetables from skillet.
  • Cook turkey as directed on package in same skillet until light golden brown and no longer pink in center. Remove from heat.
  • Top each turkey slice with vegetables and cheese. Cover and let stand 1 to 2 minutes or until cheese is melted. Spread sandwich spread on bread. Top each slice with turkey topped with vegetables and cheese.
