Rhubarb lovers, rejoice! Not limited to just crisps and pies anymore, this rhubarb cobbler is about to become your favorite springtime dessert. If you want to eat all rhubarb, all the time, this is the recipe for you!

1 cup all-purpose flour
2 tablespoon sugar
1.5 teaspoon baking powder
0.25 teaspoon salt
0.5 teaspoon ground cinnamon (optional)
0.25 cup butter
6 cup fresh or frozen unsweetened sliced rhubarb
1 cup sugar
2 tablespoon cornstarch
1 egg
0.25 cup milk
2 teaspoon sugar (optional)
0.125 teaspoon ground cinnamon (optional)

Steps:

  • Preheat oven to 400°F. For biscuit topper, in a medium bowl stir together flour, the 2 tablespoons sugar, baking powder, salt, and 1/2 teaspoon cinnamon (if desired). Cut in butter until mixture resembles coarse crumbs; set aside.
  • For filling, in a large saucepan combine rhubarb, the 1 cup sugar, and cornstarch. Cook over medium heat until rhubarb releases juices, stirring occasionally. Continue to cook, stirring constantly, over medium heat until thickened and bubbly. Keep the filling hot.
  • In a small bowl stir together egg and milk. Add to flour mixture, stirring just to moisten. Transfer hot filling to a 2-quart square baking dish. Using a spoon, immediately drop batter into six mounds on top of filling. If desired, combine the 2 teaspoons sugar with 1/8 teaspoon cinnamon; sprinkle over biscuits.
  • Bake for 20 to 25 minutes or until biscuits are golden. Cool in dish on a wire rack for 30 minutes.

3 cups chopped rhubarb, or to taste
¾ cup white sugar
3 tablespoons butter
1 cup all-purpose flour
½ cup milk
1 teaspoon baking powder
1 teaspoon vanilla extract
½ teaspoon salt
1 cup white sugar
1 tablespoon cornstarch
¼ teaspoon salt
1 cup boiling water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread rhubarb into the bottom of a 9x13-inch baking dish.
  • Beat 3/4 cup white sugar and butter together in a bowl using an electric mixer until creamy and smooth; stir in 1 cup flour, milk, baking powder, vanilla extract, and 1/2 teaspoon salt. Pour batter over rhubarb.
  • Mix 1 cup sugar, cornstarch, and 1/4 teaspoon salt in a bowl; sprinkle over batter. Pour boiling water over sugar mixture layer.
  • Bake in the preheated oven until cobbler is lightly browned, about 1 hour.

2 tablespoons cornstarch
4 cups chopped rhubarb
1 tablespoon water
1 tablespoon butter, diced
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 tablespoon white sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup butter
¼ cup milk
1 egg, beaten
2 tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch square baking dish.
  • In a saucepan, mix sugar and cornstarch for filling. Stir in the rhubarb and water. Bring to a boil. Cook and stir for 1 minute. Transfer to the prepared baking dish. Dot with butter, and sprinkle with cinnamon.
  • In a medium bowl, sift together flour, sugar, baking powder, and salt for topping. Cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, mix together milk and egg. Add all at once to dry ingredients, stirring just to moisten. Drop by teaspoonfuls on top of the rhubarb mixture. Sprinkle with sugar.

This is an easy cobbler to put together and one I have been making for years, I find that one cup of sugar is the perfect amount for my taste if you prefer a less sweeter and more tart taste then reduce the sugar by a couple of tablespoons.

4 1/2 cups rhubarb, cut into 1/2-inch pieces
1 cup sugar
1 1/4 cups flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup cold butter, cut into pieces (no subs please!)
1 egg, beaten
1/2 cup half-and-half cream or 1/2 cup full-fat milk

Steps:

  • Set oven to 375 degrees F.
  • Grease a 9-inch baking dish.
  • Mix the rhubarb and 1 cup sugar, and place in the baking dish.
  • To make the cobbler batter: combine flour, 3 tablespoons sugar, baking powder and salt.
  • Cut in the cold butter to make a crumbly mixture.
  • In a small bowl, whisk/combine the egg and half and half cream.
  • Add to the dry ingredients; stir with a fork to create a stiff batter.
  • Drop by spoonfuls on top the rhubarb/sugar mixture in the baking dish (does not have to cover completely).
  • Bake for 35-40 minutes.
  • Serve warm topped with ice cream.

1/4 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon butter
1/4 cup milk
1 egg, beaten
1/2 cup sugar
1 (3 ounce) strawberry gelatin
2 tablespoons flour
3 cups rhubarb, chopped
1/4 cup powdered sugar
vegetable oil cooking spray

Steps:

  • Spray a 9 inch pan and set aside.
  • Start oven at 375.
  • Make a crust:.
  • Cut the butter into the flour,cinnamon & salt. Mix in the milk & egg. Knead with a fork and pat into a 9 " round. Place into prepared pan.
  • Place the rhubarb onto the crust and set aside.
  • Into a med. bowl mix together the sugar and strawberry gelatin. Pour over the rhubarb and bake for 35-40 minute Remove from oven and dust with powdered sugar if desired.
  • Makes 8 servings.

3 cups diced rhubarb
2 cups sugar, divided
1 tablespoon butter
1/2 cup shortening
1 large egg
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup whole milk
Whipped cream or ice cream, optional

Steps:

  • Place rhubarb in a 13x9-in. baking pan. Sprinkle 1 cup sugar over and dot with butter. In a bowl, cream shortening and remaining sugar. Beat in egg. Sift together flour and baking powder; add alternately with milk to creamed mixture. Drop by tablespoonfuls over rhubarb. Bake at 350° for 55-60 minutes. Serve warm with whipped cream or ice cream if desired.

Steps:

  • Heat oven to 350°F. Grease 8-inch square (2-quart) glass baking dish with butter or cooking spray.
  • In large bowl, mix rhubarb, brown sugar, vanilla and lemon juice. Pour mixture into baking dish.
  • In small bowl, stir together Bisquick mix, butter and milk with fork just until combined. Using hands, break dough into small pieces and sprinkle evenly over rhubarb mixture.
  • Bake 40 to 45 minutes or until topping is golden brown and fruit is bubbly.
  • To serve, scoop warm cobbler into bowls; top with whipped cream.

  • Preheat oven to 425°. In a large bowl, mix sugar and flour. Add fruit; toss to coat. Transfer to a greased 11x7-in. baking dish. Dot with butter., For crust, in a bowl, mix flour and salt.
