Chili Garlic Butter Pasta - a simple made pasta with a fusion of Italian and Asian flavors. Aromatic garlic and spicy red pepper flakes add a bit of zing to this delectable butter sauce with an Asian flair. Pair with your favorite noodles and bask in the glory of the dish's simplicity!

1 pound spaghetti
½ cup butter (unsalted)
8 cloves garlic (chopped)
2 teaspoon red pepper flakes
⅔ cup soy sauce (low sodium)
¼ cup oyster sauce
1 cup Parmesan cheese (freshly grated)

Steps:

Cook spaghetti: Cook spaghetti according to package instructions until al dente. Reserve about a cup of pasta water.
Make the sauce: Meanwhile, add butter to a skillet and melt over medium heat. Add the garlic and red pepper flakes and cook for about a minute. Make sure the heat is on medium so as not to burn the garlic. Add the soy sauce and oyster sauce to the skillet and stir everything together.
Stir in the pasta: Add the pasta to the skillet and toss, still over medium heat, until the pasta becomes glossy and sauce envelops the pasta, could take a couple minutes. If you find the pasta is too dry, add in some of the pasta water as needed, though there should be enough sauce. Finally, add the parmesan cheese and stir everything together.

This is the easiest pasta to make and one of the best: simply a clove of garlic, a pinch of chilli flakes, a little parsley and a generous blessing of olive oil. Watch Anna Del Conte cook the perfect pasta.

Ingredients

200g/7oz dried spaghetti
1 fat garlic clove
handful fresh parsley leaves
3 tbsp extra virgin olive oil
2 pinches dried chilli flakes, to taste
sea salt

Steps:

Add 2 tablespoons salt to 2 litres water and bring to the boil in a large saucepan. Add the spaghetti and return to the boil quickly, then cook until al dente.
Finely chop the garlic and parsley together.
Heat the oil in a frying pan over a low heat. Add the garlic and parsley and fry for 1 minute, or until the garlic is softened but not coloured. Add the chilli flakes and cook for 1 more minute.
Drain the spaghetti lightly, then add to the frying pan with the water still clinging to it. Mix to coat with the oil. Add a little extra cooking water if needed. Sprinkle the spaghetti with the parsley, toss, season with salt and serve.

add pasta (using tongs or draining spoon) straight to frying the cooking liquid will stop the garlic and chillies from burning,
add salt and pepper and more extra virgin olive oil,
cook and mix till most on the cooked liquid has gone,
now add your chopped flat leafed parsley,
serve when parsly is mixed in, enjoy !!
