GARLIC HERB SWEET POTATO WEDGES
These Garlic Herb Sweet Potato Wedges are loaded with flavor and baked until crispy and golden. Made with just a few simple ingredients and ready in no time, these wedges are the perfect side dish for just about any meal!

Steps:
- Preheat oven to 425F. Line a large baking pan with parchment paper. Set aside.
- Place potato wedges in a medium bowl and toss with olive oil, making sure each wedge is fully coated. Place each wedge onto prepared baking pan in an even layer. Set aside.
- In a small bowl, combine the Italian seasoning, garlic powder, salt, and thyme. Sprinkle mixture over potatoes, coating each one evenly.
- Bake for 25-30 minutes. Then, turn on broiler to medium setting and broil for 4-6 minutes, or until lightly browned and crispy.
- Remove from oven and let cool for 10 minutes on baking pan.
- Sprinkle wedges with parsley and serve with ketchup, if desired.

Steps:
- Heat oven to 450 degrees.
- On a baking sheet, combine the sweet potatoes, oregano, salt, and half the oil.
- Toss well and roast for 40 minutes, or until tender and golden, flipping once halfway through.
- Remove from oven.
- Meanwhile, in a skillet, lightly toast the pumpkin seeds over medium heat, stirring occasionally, about 5 minutes.
- Remove from the heat.
- Add the garlic, lemon juice, and the remaining oil and stir together.
- Add the sweet potato wedges and toss well.

- Combine the herbs, salt, garlic powder, and pepper in a small bowl. Toss with potatoes and place the wedges directly on the grill. Remove when grill marks appear on all sides and potatoes are tender.
