Spanish Mushrooms in Garlic Sauce (Tapas) image

Tapas are unique in that they are not eaten at home but are found only in tascas, where they are available from before lunch to late at night. Unlike American bars, these lively, family-oriented establishments cater to a clientele that is more interested in eating than in drinking, and their arrays of edibles tempt many people to skip dinner altogether in favor of making a meal of these luscious snacks. The word tapa means "cover" or "lid". There are two kinds of tapas: naturals, serves as is, such as olives, cheeses, oysters, ham, and sausages; and de cocina, usually cooked, which are served hot or cold. Offer tapas with wine or Sherry, or, in summer, with sangria, or some other cooling beverage.

1/2 lb mushroom
3 tablespoons olive oil
2 medium garlic cloves, finely chopped
1 1/2 tablespoons all-purpose flour
1 cup beef broth
1/2 dried hot red chili pepper, seeded and cut into 3 pieces
2 tablespoons finely chopped parsley
2 teaspoons freshly squeezed and strained lemon juice
salt

Steps:

  • Trim off any tough ends of the mushroom stems. Wipe the mushrooms clean with dampened paper towels. If the mushrooms are large, halve or quarter them. Set aside.
  • In a medium-sized heavy skillet or fire proof casserole heat 2 Tablespoons of the oil over medium high heat. Add the garlic and sauté, stirring, until barely golden; do not let it brown. Immediately remove the pan from the heat and stir in the flour until smooth. Return to the heat and cook, stirring, 1 to 2 minutes. Gradually stir in the broth. Add the chili pepper, 1 Tablespoon of the parsley, the lemon juice, and salt and cook, stirring, until the sauce is thick and smooth. Remove from the heat and set aside.
  • In a medium sized, heavy skillet heat the remaining 1 Tablespoon oil over high heat. Add the mushrooms and sauté, stirring frequently, until they are lightly browned. Add the mushrooms to the sauce and simmer 5 minutes. Taste and adjust the seasoning.
  • Transfer to a heated serving bowl. Sprinkle with the remaining 1 Tablespoon parsley and serve at once as a tapa. Makes 4 servings.

2/3 lb very fresh white button mushrooms, wiped clean
kosher salt, to taste
fresh ground black pepper, to taste
2 tablespoons dry spanish fino sherry wine or 2 tablespoons dry spanish oloroso sherry wine

Steps:

  • In a heavy skillet, heat olive oil on medium-low and add garlic. Cook, stirring occasionally, until garlic is soft but not brown.
  • Add mushrooms and season with salt and pepper. Raise the heat to medium-high, stirring to incorporate the garlic and seasonings. Cook, tossing occasionally, until mushrooms render their liquid and begin to brown, about six minutes.
  • Raise the heat to high, add the sherry and cook, stirring, to continue browning the mushrooms and evaporate the wine.
  • Remove from heat, adjust seasoning and serve immediately.

1/4-cup extra virgin olive oil
3 large cloves garlic, minced
2/3-lb. very fresh white button mushrooms, wiped clean
kosher salt and freshly ground black pepper
2 Tbs. dry Spanish fino or oloroso sherry

Steps:

  • In a heavy skillet, heat olive oil on medium-low and add garlic. Cook, stirring occasionally, until garlic is soft but not brown. Add mushrooms and season with salt and pepper and then raise the heat to medium-high, stirring to incorporate the garlic and seasonings. Cook, tossing occasionally, until mushrooms render their liquid and begin to brown, about six minutes.
  • Raise the heat to high, add the sherry and cook, stirring, to continue browning the mushrooms and evaporate the wine. Remove from heat, adjust seasoning and serve immediately.

-12 button mushrooms
-4 cloves of garlic
-1 Spanish pepper
-2 tbsp extra virgin Spanish olive oil
-1 fresh lemon
-sea salt
-black pepper
-fresh parsley

Steps:

  • Cut 12 button mushrooms (that have been cleaned) in half, thinly slice 4 cloves of garlic and cut 1 spanish pepper (or any ther type of hot pepper) into small pieces
  • Heat a non-stick frying pan with a medium-high heat and add 2 tablespoons of extra virgin Spanish olive oil, 2 minutes later add the garlic and peppers and mix with the oil, about 1 minute later add the mushrooms and mix everything together, after 2 minutes season everything with seal salt, freshly cracked black pepper, a squeeze of fresh lemon juice and some freshly chopped parsley and continue to mix everything together, cook for an additional 2 minutes
  • Transfer everything in the pan into a plate and garnish with some freshly chopped parsley
  • Enjoy!

1/2 cup parsley leaves, a couple of handfuls
8 cloves garlic, cracked away from skins
1 pound chorizo sausage, casings removed
1/4 cup extra-virgin olive oil
1 1/2 pounds tenderloin or sirloin of beef, well trimmed, cut into bite sized pieces
Coarse salt and pepper
24 medium to large mushroom caps
1 cup dry sherry

Steps:

  • Preheat a grill pan over medium high heat.
  • Place parsley and garlic in food processor and chop.
  • Heat a large, heavy skillet over high heat.
  • Cut chorizo on an angle in 1/2-inch slices. Grill 2 minutes on each side. Transfer to a serving dish.
  • To the hot skillet, add about 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Add meat and sear the pieces on all sides to caramelize it evenly. Add half of the garlic and parsley mixture to the pan. Turn to coat the meat. Season meat with salt and pepper. Add 1/2 cup sherry and turn the meat in the wine as it deglazes the pan. Transfer to a serving dish and cover with loose foil to keep warm. Return pan to heat.
  • Repeat the same process with the mushrooms: add extra-virgin olive oil to the pan, 2 tablespoons or 2 turns of the pan. Add mushrooms, cook 3 or 4 minutes to char edges and soften, add parsley and garlic, then salt and pepper, then sherry. Reduce sherry while scraping up pan drippings and remove to serving dish.

This recipe for garlic mushrooms tapas is quick and easy to make. A great starter dish or part of a varied Spanish tapas meal

150g Mushrooms, chopped (I used Chestnut mushrooms, but porcini or large button mushrooms are fine)
5 garlic cloves, finely sliced
50ml extra virgin olive oil
50ml White wine
1 tsp Herbes de Provence
Freshly chopped coriander to garnish
2 dried bird eye chillies

Steps:

  • Heat the oil in a cast-iron skillet over medium heat and add the garlic. Then add the mushrooms and cook for about 4 minutes, stirring regularly.
  • Then add the white wine and the herbes de Provence and cook for a further 5 minutes until the mushrooms are cooked. (If you wish to make the mushrooms spicy, then add the chilli pepper at this stage as well.)
  • Add some chopped coriander (cilantro) before serving up.

In Spain, it would be made with about four times as much olive oil and served in small ceramic cazuelas. You also can serve the mushrooms with toothpicks.

2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced or minced
1 small dried red chili, crumbled, or 1/4 to 1/2 teaspoon red pepper flakes
2 pounds mushrooms, wiped clean, stems trimmed, cut in half
Salt to taste
1/2 cup dry white wine or fino sherry
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley

Steps:

  • Heat the oil over medium heat in a large, heavy nonstick skillet. Add the garlic and chili or red pepper flakes. After about 30 seconds, when the garlic begins to sizzle, add the mushrooms and turn the heat to medium high. Cook, stirring, until they sear and begin to sweat, then sprinkle them with salt and add the white wine or sherry. Turn the heat down to medium, and continue to cook, stirring or tossing in the pan from time to time, until the mushrooms are tender, five to 10 minutes. Stir in the lemon juice and parsley, taste and adjust seasonings, and remove from the heat. Serve hot or warm in small ceramic dishes, or serve on a platter with toothpicks stuck into the mushrooms.
