Steps:
- Preheat the oven to 450 degrees F. Spray a baking sheet with cooking spray.
- Cut each of the potatoes in half lengthwise. Rest each half on its flat side and cut each half lengthwise, straight down into 4 even slices. You will have 16 slices altogether. Cut the rounded edge off of the outermost slices so each slice can lay completely flat on either side. Put the potatoes into a medium bowl and toss with the oil.
- Place the potatoes on a baking tray and bake for 20 minutes. Sprinkle the potatoes with cheese on their up-facing side and continue to bake for another 15 to 20 minutes, until they are crisp and golden brown. There is no need to turn them. Season with salt and serve immediately.

- Bake the steak fries according to package directions, being certain to flip them halfway through the cooking time to brown and crisp them evenly.
- While the fries bake, add the extra virgin olive oil and garlic in a small microwave-safe bowl. Tightly wrap the bowl with plastic wrap and microwave on medium for 45 seconds, or until the oil is warm to the touch and the garlic is very fragrant. Set aside.
- When the fries are baked to crisp, immediately transfer them to a heat-safe bowl, add the 1/2 cup grated Parmesan, minced parsley, salt, and garlic-infused oil and toss to coat the fries evenly with all of the toppings. Transfer to a serving plate and scatter the remaining 2 tablespoons of grated Parmesan over the top. Serve immediately!

- Preheat oven to 425°F. Spread oil on a large dark baking sheet with edges, making sure it is completely covered. Soak the potato slices in hot water for 10 minutes. Drain and dry (really well!) with a towel. Place in a large bowl.
- Meanwhile, stir together Argo® Corn Starch and water. Pour over the soaked and dried potatoes and toss to coat completely with the corn starch slurry (using your clean hands works best!).
- Spread out fries on the prepared pan, letting any excess corn starch slurry drip off before they go to the pan. Ensure there is room between each piece so all sides get crispy!
- Bake for 15 minutes, then use a flat stiff spatula to carefully flip the fries over. Bake for an additional 10-12 minutes until fries are brown and crispy. While fries are baking; mix together the rosemary, garlic, and a pinch of salt, pressing together with the back of a spoon. Once they’re done baking, remove the fries from the pan and let cool slightly on a paper towel to remove some excess oil. Sprinkle with salt.
