1 cup distilled white vinegar
½ tablespoon mustard powder
1 tablespoon ground black pepper
1 tablespoon ground red pepper
1 tablespoon salt
1 tablespoon white sugar
2 tablespoons butter
1 (6 ounce) can tomato paste

Steps:

  • Combine the vinegar, mustard, black pepper, red pepper, salt, white sugar, and butter in a medium saucepan. Bring to a boil over medium heat, stirring frequently. Stir in the tomato paste until well blended. Allow to cool.

1 quart apple cider vinegar
1 pint catsup
2 cups prepared mustard
Tabasco sauce
black pepper
cayenne pepper
1 lb butter, melted (do not use margarine)

Steps:

  • Combine vinegar, catsup, mustard and tabasco sauce in a medium-size saucepan.
  • Bring to a boil and add seasonings to taste.
  • Blend in melted butter, stirring well and turn heat to low, keeping mixture warm.
  • Using a basting brush or basting mop, swab the chicken with the sauce when it comes in hot from the pit or grill.
  • Makes 2-1/2quarts.

1/2 cup firmly packed brown sugar
1 Tbs. onion salt
2 tsp. freshly ground black pepper
1 tsp. garlic powder
1 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground mace
1/3 cup white vinegar
2 cups tomato ketchup
1 cup peach preserves, puréed
2 Tbs. Worcestershire sauce
2 Tbs. honey
4 Tbs. butter, cubed and well chilled

Steps:

  • In a medium saucepan, combine all the ingredients except the butter. Bring to a boil, stirring to dissolve the sugar. (You may want to have a lid handy to protect yourself and your kitchen from any sputtering.) Reduce the heat and simmer for 25 minutes, stirring occasionally. With a whisk, blend in the butter cubes, a couple at a time, until incorporated. This is the sweetest of the three sauces for barbecued chicken. You can add a tablespoon or so of peach liqueur for more peach flavor.
