2 cups fresh cherries, divided
3 tablespoons cherry brandy
6 tablespoons granulated sugar, divided
2 tablespoons water
12 green grapes (long, seedless)
1 cup cream cheese, room temperature
1/2 teaspoon vanilla extract
1/4 cup ground almonds
1 cup whipping cream
2 tablespoons almonds, chopped (optional)

Steps:

Wash & drain cherries, then remove pits & set aside 8 whole cherries for garnish.
Place remaining cherries in a bowl & add cherry brandy.
In a small saucepan, boil 3 tablespoons of sugar in the water to make a thin sugar syrup, then add this syrup to the cherries & stir to blend, before covering the cherries & setting them aide to soak for 20 minutes.
Cut the grapes in half, & put 6 halves in each of 4 glass dishes, before arranging the cherries on top of the grapes.
Thoroughly blend together the cream cheese, 3 tablsepoons of sugar, vanilla extract & ground almonds.
Whip the cream & carefully add it to the cream cheese mixture, then spoon it over the cherries.
Decorate each bowl with the chopped almonds & 2 whole cherries each.

Cherries have long been reputed to be an aphrodisiac, and the seductive flavor and texture and vibrant color of this soup make it the ideal prelude to any romantic meal. You may use high-quality German cherries in a jar, such as ARO Schattenmorellen, or sour cherries, in this recipe. Instead of sugar, you may wish to use some German cherry syrup to taste."

Ingredients

1 1/2 lbs ripe black cherries, un-pitted, divided (see note above)
2/3 cup fruity white wine
1 cinnamon stick
2/3 cup water
2 tablespoons sugar
1 grated lemon, juice and rind of
1 1/4 cups creme fraiche, divided
2 tablespoons brandy (German brand, Asbach Uralt)

Steps:

Remove the stems and pits from the cherries but do not discard.
Place one-half of the pits in a clean kitchen towel or freezer bag and crush them with a mallet.
Keep the other half of the pits intact.
In a large saucepan, combine the crushed pits, whole pits, stems, wine, cinnamon, water, sugar, lemon peel, and lemon juice.
Bring to a boil over medium heat, and then cover and simmer for 10 minutes.
Remove from heat and strain the liquid through a fine-mesh sieve.
Return the liquid to the pan.
Stir in 1 cup of the crème fraiche and all but one-quarter of the cherries.
Allow to simmer over medium-low heat for 5 minutes, whisking occasionally.
In a food processor or blender, purée the cherry mixture until smooth.
Refrigerate until cool, and then whisk in the Asbach Uralt.
Chill until ready to serve.
Drizzle the remaining 1/4 cup crème fraiche atop the soup and garnish with the remaining cherries.

Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Butter well a medium casserole dish of about 19x23 cm/ 7x8 inches.
Pit the cherries and weigh the 500 g/ 1.1 lbs after pitting. If using frozen cherries, defrost them and pat them dry with kitchen paper. If using canned cherries, let them drain well.
Mix together the soft butter and the sugar until foamy. Add the vanilla sugar or extract, the lemon zest, eggs and semolina and stir again to incorporate everything.
Mix the flour and the baking powder together and sieve them over the rest of the ingredients. Incorporate carefully using a spatula and add the milk little by little, stirring carefully. Add the pitted cherries to the mixture.
