Lady Finger Mocha Dessert Recipes

CHOCOLATE LADY FINGER ICEBOX CAKE WITH FIGS

Steps:

• Soak half the sliced figs in the hot coffee for 10 minutes, or while you assemble the rest of the cake. Drain the figs and reserve the coffee.
• Whip the cream, adding in the confectioner's sugar and vanilla once it starts thickening. As you start seeing soft peaks, scoop in the mascarpone and finish whipping.
• Mist the pan with cooking spray. Spread a thin layer of the whipped cream on the bottom. Crumble half a sleeve of ladyfingers evenly over the whipped cream. Cover with a layer of half the remaining whipped cream.
• Dot the coffee-soaked figs across the surface of the whipped cream layer. Drizzle with a fork the chocolate across the figs, reserving 1 tablespoon of chocolate.
• Layer the remaining lady fingers on top. Spread the remaining whipped cream on top of the ladyfinger layer. Using a spoon, dollop the remaining melted chocolate in several places on top, dragging a chopstick or skewer through them to swirl the chocolate. Polka dot the remaining unsoaked fig slices across the top.
• Chill for 4 hours or longer before slicing.

LADY FINGER MOCHA DESSERT

Steps:

• Brush sides of ladyfingers with about 1/4 cup of coffee.
• Place ladyfingers on bottom and up side of 2 quart serving bowl.
• Beat cream cheese and remaining 3/4 cup coffee in large bowl with wire whisk until smooth.
• Gradually beat in milk until smooth.
• Add pudding mixes.
• Beat with wire whisk until blended.
• Gently stir in 1/2 of the coolwhip.
• Spoon into prepared bowl.
• Cover.
• Refrigerate 1 hour or until set to serve.
• Top with remaining coolwhip.

LEMON LADYFINGER DESSERT

Steps:

• Set aside 5 ladyfingers; line the sides and bottom of a lightly greased 9-in. springform pan with remaining ladyfingers. In a large bowl, beat cream until stiff peaks form; set aside. , In another large bowl, beat cream cheese and curd until smooth; add sugar. Beat on medium for 1 minute. Fold in whipped cream. Spread half of cream cheese mixture into prepared pan. Arrange reserved ladyfingers in a spoke pattern over top. Spread with remaining cream cheese mixture. Cover and chill overnight.

VERA'S LADY FINGER DESSERT

Steps:

• Whip whipping cream and almond extract together and set aside.
• Line the bottom and the sides of pan with your lady fingers.
• Cream together powdered sugar and cream cheese, fold in shipping cream mixture into cream cheese mixture.
• Spread mixture into the pan lined with lady fingers. Smoother top.
• Pour can of cherry pie filling over mixture.
• Cover with saran wrap, and refrigerate overnight.
• Enjoy.
