German Chocolate Rice Pudding

2 cups cooked Mahatma® White Rice
3 cups Chocolate Milk
1/4 cup sugar
3 tbsps. unsalted butter
1 teaspoon vanilla extract
½ cup pecans, chopped
½ cup shredded coconut, toasted

Steps:

  • If you love the sound and flavors of the Chocolate German Cake, but don't have the time to bake - read on because this rice pudding is right up your alley. Try it today and enjoy this sinful chocolate cake in the form of delicious individual rice puddings. Step 1 In a saucepan, combine the cooked white rice, chocolate milk, sugar, and butter. Cook over low heat until thickened. This should take about 30 minutes, stirring often.
  • Step 2 Next, add the vanilla extract, chopped pecans, and shredded coconut. When combined, pour into individual dessert cups.
  • Step 3 When ready, garnish with additional pecans and coconut, if desired. This can be served warm or cold.

¾ cup uncooked white rice
1 ¼ cups water
1 ½ cups milk
⅓ cup white sugar
1 teaspoon vanilla extract
⅓ cup raisins
1 tablespoon butter
2 tablespoons unsweetened cocoa

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In the top of a double boiler over simmering water, combine 1 1/2 cups cooked rice, milk, sugar, vanilla, raisins, butter and cocoa. Cook, stirring occasionally, until thickened, 20 to 30 minutes.

14 ounces German sweet chocolate
1/4 lb butter
3 eggs, seperated
1 cup powdered sugar
1 pint whipping cream or 3 (8 ounce) containers Cool Whip
1 teaspoon vanilla
1 (10 ounce) box vanilla wafers

Steps:

  • Melt chocolate and butter together.
  • Add chocolate mixture to beaten egg yolks; then add 2/3 cups powdered sugar.
  • Chill, then fold in whipped cream.
  • Beat egg whites until peaks form.
  • Add remaining 1/3 cup sugar into eggs and fold into chocolate mixture.
  • Crush vanilla wafer and line a 9X9 inch pan with part of crumbs.
  • Spread 2 cups of chocolate mixture over the crumbs.
  • Repeat with more crumbs and then the pudding mixture.
  • Top pudding with crumbs.
  • Refrigerate 24 hours before serving.
  • Cut and serve.

This is a typical German recipe for Rice Pudding. For this recipe, you don't want to substitute brown rice as it won't get creamy. It is typical to sprinkle a cinnamon and sugar on top of each serving, though some prefer to add fruit, with cherries a popular choice.

1 cup short grain white rice
1/4 cup sugar
3 cups milk
1 cup cream
1/8 teaspoon salt
2 inches piece vanilla beans, split open (or 1 teaspoon vanilla extract)

Steps:

  • Mix the rice, sugar and salt in a large saucepan. Stir in the milk and cream, and add the whole piece of vanilla bean. Place over medium heat and bring to a boil, stirring often.
  • Reduce heat and simmer the rice for 30 minutes, or until soft and milk/cream mixture becomes thick. Stir often.
  • Scratch out vanilla seeds and stir into pudding. Discard vanilla bean pod.
  • Serve warm with cinnamon and sugar or fruit compote, or both.
