GERMAN CHOCOLATE CAKE WITH COCONUT-PECAN SAUCE

Steps:
- Preheat oven to 350°F. Grease a 9"x 13" baking pan.
- Whisk together the flour, baking powder, and salt. Set aside.
- Place the butter and chocolate in a microwave-safe bowl. Heat in the microwave at half-power in 30-second increments until the butter has melted and the chocolate melts when stirred. Stir until smooth. Set aside to cool slightly.
- Combine the sugar, water, and vanilla. Stir in the chocolate mixture. Whisk in the egg whites and the egg.
- Add the flour mixture, stirring just until combined. Transfer the batter to the prepared pan.
- Bake 30 to 35 minutes, or until a pick inserted into the center comes out clean. Cool in the pan on a wire rack.
- Place the sugar and cornstarch in a medium saucepan. Whisk in the milk. Add the butter.
- Cook over medium heat until the mixture boils. Continue cooking for 1 minute.
- Remove from the heat. Stir in the pecans, coconut, and vanilla. Serve warm over slices of cake. If you like, garnish with more pecans and coconut.

This warm, silky sauce is perfect over ice cream or pound cake. Be sure to use "sweet" baking chocolate, not semisweet or unsweetened.

- In a small saucepan, melt butter and chocolate over low heat, stirring constantly until melted.
- Stir in sugar, vanilla, salt, and milk; bring to a boil over medium heat. Cook 7 minutes, stirring constantly.
- Serve warm over ice cream or pound cake.
- Note: This sauce can be reheated in the microwave oven on Medium (50% power). The amount of time will vary with the amount of sauce being reheated.

After the "cooking spray" in the ingredients, the rest of the ingredients are for the sauce, Z would not let me post it that way or I am too blonde to figger it out. - Preheat oven to 350°.
- Place butter and chocolate in a large microwave-safe bowl, and microwave at high 1 minute or until melted, stirring until smooth.
- Stir in sugar, water, and vanilla.
- Add egg whites and egg, stirring with a whisk.
- Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking powder, and salt, and add to chocolate mixture, stirring with a whisk until smooth.
- Coat bottom of a 13 x 9-inch baking pan with cooking spray; pour batter into pan.
- Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack.
- Serve cake with Coconut-Pecan Sauce.

- Combine sugar and cornstarch in a medium, heavy saucepan.
- Add milk; stir with a whisk.
- Add butter. Bring to a boil over medium heat; cook 1 minute. Stir constantly.
- Remove from heat; stir in pecans, coconut, and vanilla. Serve warm over cake.

- Preheat oven to 350 degrees F. Grease and flour 13 x 9 inch pan.
- Melt caramels with 1/3 cup condensed milk.
- In a separate bowl, combine cake mix with melted butter and 1/2 cup of condensed milk. Stir well.
- Spread 1/2 of the cake mix mixture in pan and bake for 6 to 8 minutes.
- Remove from oven and cover with caramel, chips and nuts. Put remaining cake mix on top. Bake for another 10 minutes.

GERMAN CHOCOLATE COOKIES
While a big slice of German chocolate cake may appeal to many, baking one from scratch may not. That's where these cookies come in. They satisfy the craving for deep, dark pools of warm chocolate, sweet pecans and fragrant coconut with only a fraction of the work. To toast the coconut, spread it out on a baking sheet and bake at 350 degrees for 5 to 10 minutes. Take it out of the oven when the edges and some of the coconut in the center are deep golden brown. It's fine if some of the coconut is still pale.

- Heat oven to 350 degrees. In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt. In a large bowl, beat butter, granulated sugar and brown sugar together with an electric mixer on medium speed until fluffy, about 2 minutes. Beat in the egg and vanilla until smooth.
- Reduce the speed to low and beat in the flour mixture. Add coconut, chocolate and pecans and mix to just combine.
- Portion the dough in 2 tablespoon scoops and roll them into balls. Place them on parchment-lined baking sheets, at least 2 inches apart. Bake the cookies until dry on top but still soft in the center, about 10 minutes. Remove from the oven and immediately tap the sheets against a work surface to deflate them slightly. Let the cookies sit on the sheets for 3 minutes, then transfer them to a rack to cool completely.
