3 tablespoons sugar
1 cup milk, warmed
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
1 cup unbleached all-purpose flour
2 teaspoons vegetable shortening
Confectioners' sugar
Marinated Berries or Glazed Apples and Pears, recipes follow
Serving suggestion: Maple syrup
2 tablespoons sugar
1 vanilla bean, split lengthwise, and seeds scraped out with a knife and reserved

Grated zest of 1/2 lemon
Grated zest of 1/2 orange
1 cup water
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lemon juice
1/2 pint raspberries
1/2 pint blueberries, rinsed
1/2 pint strawberries, rinsed, tops trimmed, halved or quartered, if large
3 small Granny Smith apples or other tart baking apple (about 1 1/4 pounds)
3 Bosc pears (about 1 1/4 pounds)
Juice of 1 lemon
1/4 cup unsalted butter
Grated zest of 2 oranges, plus their juice
Two 3-inch-long cinnamon sticks
2 tablespoons Calvados, Apple Jack, or brandy (optional)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a medium bowl, whisk together the eggs, salt, sugar, milk, vanilla, and butter. Whisk in the flour to make a smooth batter. Set aside.
  • Heat a well-seasoned 10-inch cast-iron skillet in the oven for 10 minutes. Remove and brush the inside with the shortening. Pour in the batter and bake for 15 minutes.
  • Lower the oven to 350 degrees F. and continue baking until puffed and golden brown, about 13 to 15 minutes more. Run a knife around the edge of the skillet. Sift the confectioners' sugar over the pancake. Serve immediately in the skillet with maple syrup, marinated berries, or glazed apples and pears.
  • In a small saucepan, combine the sugar, vanilla bean and seeds, citrus zests, and water. Bring to a boil and then reduce the heat to low. Simmer very gently until syrupy, about 25 minutes. Remove from the heat and add the citrus juices. Combine the berries in a bowl. Strain the warm syrup over the berries and marinate at room temperature for 30 minutes. Serve.
  • Peel, core, and cut both the apples and pears into 3/4-inch wedges. In a medium bowl, toss the fruit with the lemon juice.
  • Melt the butter in a medium skillet over medium heat. Add the sugar, orange zest, and cinnamon sticks and stir until sugar is dissolved. Add the fruit, increase the heat to medium-high, and cook, shaking the pan frequently, until glazed, about 10 minutes. Raise the heat to high, add the orange juice, and cook until the fruit is easily pierced with a paring knife, about 1 minute more. If desired, add the Calvados. If cooking on a gas burner, carefully tip the pan toward the flame to flambe the alcohol; if cooking over an electric element, hold a long match near the mixture. Swirl the pan over the heat until the flame subsides. Serve warm.

The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

½ cup unbleached all-purpose flour
½ teaspoon baking powder
1 tablespoon sugar
1 pinch salt

1 teaspoon vanilla extract

¼ cup unsalted butter
½ cup white sugar, divided
½ teaspoon ground cinnamon

1 large tart apple - peeled, cored and sliced

Steps:

  • In a large bowl, blend eggs, flour, baking powder, sugar and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in a 10 inch oven proof skillet, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, cinnamon and 1/2 teaspoon nutmeg. Sprinkle mixture over the butter. Line the pan with apple slices. Sprinkle remaining sugar over apples. Place pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples.
  • Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes. Slide pancake onto serving platter and cut into wedges.

I've had similar german pancakes but growing up my mom was the only one that used nutmeg. It adds just the right spice. These have a sweet eggy taste. I make them reguarly for house guests because they are super easy and I haven't met anyone that doesn't like them!

Steps:

  • Preheat oven to 375 degrees. Place butter in a 9x13 glash dish and place in oven while it heats.

  • Remove pan from oven (butter should be fully melted) and pour egg mix inches.

Simple & Sweet German Pancakes are so quick and easy to prepare. They're sure to become a new favorite in your home!

2 whole eggs
3 egg whites (or can use 6 Tbsp of liquid egg whites)
1 cup milk
1 cup flour
1 tsp vanilla extract
1/4 tsp salt (rounded)
1 Tbsp brown sugar (packed)
3 Tbsp butter (salted and cubed)

Steps:

  • Preheat oven to 425°
  • Add the whole eggs, egg whites, milk, flour, vanilla, salt and brown sugar to a blender. Blend the batter on low for 1 minute and then scrape down the sides in case any flour is sticking to the sides. Continue to blend on low for another 2 minutes.
  • Put the butter into a 9x13 baking dish (I used glass) and place into the preheated oven while the batter rests for 5 minutes. The butter should start to boil but watch that it doesn't burn.
  • When the rest time is done, take the dish out of the oven and swirl the butter to make sure it spreads all over.
  • Give the batter a quick stir or pulse then carefully pour the batter into the dish and bake for 20 minutes. Turn the oven down to 300° and cook for an additional 5 minutes. While cooking, the pancake edges will puff up about 2 inches above the rim and then deflate when it is taken out of the oven.
  • As soon as it comes out of the oven, swirl the dish once more to distribute any melted butter left on top evenly over the pancake.
  • Serve with strawberries and powdered sugar or syrup.

1/4 cup butter, hot and melted
1/4 cup granulated sugar
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
3 large eggs
3/4 cup milk, chilled
3/4 cup all-purpose flour, sifted
1/2 teaspoon salt
6 tablespoons butter
6 tablespoons sugar

Steps:

  • Apple Filling: Saute sliced applies in butter for several minutes. Add sugar and cook for 8 minutes, turning often. If apples are too firm, cover pan and steam for a few minutes. Apples should be crisply tender - not too soft. Season with nutmeg & cinnamon. Mix well. Let stand until lukewarm before using. Filling may b amde several hours in advance an reheated just before pouring into pancakes.
  • Batter for Pancakes:.
  • Combine eggs, milk, flour & salt in medium bowl. Beat with electric beater for 2-3 minutes. Melt butter in 10 inch heavy aluminum or cast iron skillet. When very hot, pour batter into skillet and bake at 450 degree oven for 15 minutes. Lower to 350 degrees and bake for 10 more minutes until golden brown and crisp. When pancake puffs up in the center during baking, puncture well with a fork. When done, remove form oven and tun out onto long platter. Drizzle about 2 T melted butter and 2 T sugar over entire surface then spread with sauteed apples. Fold over to enclose apples. Drizzle top with about 2 more T of butter and 2 T sugar. Cut crosswise and serve at once! Yum!
