Steps:
- Sprinkle pork with salt and pepper. In a large skillet, heat oil over medium-high heat; brown meat. Transfer meat to a 4- or 5-qt. slow cooker. In the same skillet, melt butter over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Add garlic and paprika; cook 1 minute longer. Pour over meat. Add , sauerkraut and water., Cook, covered, on low until pork is tender, 3-4 hours. Stir in sour cream; sprinkle with poppy seeds. Serve with noodles.

PORK AND SAUERKRAUT GOULASH

Steps:
- Melt together the butter and olive oil in a heavy pot (one with a lid) and sauté the pork cubes and bacon until lightly browned.
- Add the onion, green and red bell peppers, mushrooms, and paprika.
- Sauté until vegetables have softened just beyond crisp and add the bay leaf, chicken stock, tomatoes, sauerkraut, and caraway seeds.
- Cover and simmer over medium low heat for 1 hour or until meat is tender.
- Season to taste with salt and pepper.
- Remove the bay leaf and serve hot with a generous dollop of sour cream with each serving (goes well with cooked noodles!).

Steps:
- Dredge meat with flour.
- Heat oil in a large skillet, when hot, add meat and cook until well browned.
- Remove and set aside.
- In same skillet, saute onion, garlic, and green pepper for 5 minutes.
- Add both paprikas and cook for 2 minutes. Add meat to onion mixture and stir.
- Add broth, tomatoes, sauerkraut, sugar, bay leaf, salt and pepper.
- Cover and simmer for 1 1/2 hours.
- Remove Bay leaf
- Serve with sour cream and parsley.

Steps:
- In a dutch oven, cook ribs and onion till ribs are browned and onion is tender.
- Remove from heat.
- Combine remaining ingredients and pour over ribs.
- Cover and bake in oven 350 deg for 1 1/2-2hrs or until ribs tender, or place in Nesco or crock pot and cook on low 8 hours.

- In a medium stock pot or Dutch oven fry the bacon until done. Add the onions and cook over medium-high heat until golden. Add the bell peppers and garlic and cook for another two minutes. Add the pork and cook for a minute until some, but not all, of the pink is gone. Stir in the paprika and remove from heat.
- Add the remaining ingredients except for the sauerkraut and sour cream. Add just enough water to barely cover the mixture. Return to heat and bring it to a boil. Cover, reduce the heat to medium-low and simmer for 90 minutes. Stir in the sauerkraut, return to a simmer, cover and simmer another 2 minutes. Add salt to taste.
- Serve with a dollop of sour cream and swirl it in the soup before eating. Serve with crusty bread, Homemade Spätzle and/or a leafy green or cucumber salad. This goulash is even better the next day.
GERMAN PORK GOULASH STEW - THE GOOD PLATE

- Heat the caraway seeds in a shallow pan and cook on low heat until they turn fragrant and brown slightly. Stir continuously.
- When they have finished browning, remove them to a mortar and pestle and grind them until they are almost a powder. You will smell their fragrance, it's nice.
- Then add the other dry spices, paprika, cayenne, and black pepper. Mix together with the seeds using the pestle until they are well mixed and set aside.
