OVEN FRIES
The secret to these baked fries being a successful fakeout to real fries: the paprika enhances the golden fried coloring, the sugar helps crisp up the outer coating of the potato, and the salt.

Steps:
- Preheat the oven to 400 degrees F.
- Cut the potatoes into "fries" by slicing them lengthwise 4 times, and then slicing each slice another 4 or 5 times. Mix the oil, sugar and paprika in a bowl or large freezer bag. Toss the potatoes in the oil and sugar mixture and transfer to a baking sheet in 1 layer. Sprinkle with salt on both sides. Bake 30 to 40 minutes, turning the fries over with tongs about halfway through.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
- In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
- Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

While they don't get the same love as French fries, home fries, or steak fries, cottage fries more than hold their own against their potato side dish fraternity brothers.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Line a baking sheet with parchment paper or a silicone baking mat and set aside.
- Combine potatoes, salt, ground black pepper, cayenne pepper, and herbes de provence in a large bowl. Drizzle olive oil over potatoes and stir to evenly coat.
- Place potatoes on baking sheet, spaced evenly, and bake in the preheated oven for 15 minutes.
- Remove from oven, flip over each potato slice, and return to the oven for another 15 minutes. Continue cooking and flipping until potatoes are well browned, about 30 minutes. Potatoes should be crispy around edges, but still soft in the center.

MIDWESTERN GERMAN FRIES WITH SAUSAGE GRAVY
This is a popular breakfast item served in a lot of restaurants in Ohio. It's a mixture of homefries, onion, green peppers and eggs topped off with sausage gravy. I like using either Italian sausage or sage sausage for the gravy. A great way to use leftover baked potatoes. If you don't have any leftover baked potates, you can put the potatoes in the microwave and use the baked potato setting. Let the potatoes cool to the touch then peel (or leave the skin on if you pefer) and slice.

- Slice the potatoes into thin slices. Fry potatoes, onion and green pepper in butter in a large skillet.
- Once the potatoes are fried to your liking, add the beaten eggs. Stir mixture and cook until the eggs are done.
- While the potato mixture is cooking, brown the pound of sausage in another skillet breaking up the sausage into small chunks.
- Once the sausage is completely cooked, mix the milk and flour together until smooth and add to the sausage. Cook over medium-high heat until the sausage gravy thickens.
- Serve the sausage gravy over the German Fries.

- Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

GERMAN FRIED POTATOES
My Grandmother got this recipe when she and my mom lived in Germany. This is my all time favorite way to fix potatoes.

Steps:
- Wash potatoes.
- Sometimes I peel the potatoes and sometimes I don't. It's good either way.
- Slice the potatoes into 1/8-inch thick slices.
- I take frozen bacon because it's easier to cut and cut strips down the side to get my one inch pieces.
- Put enough olive oil in a large deep skillet (cast iron is good) to cover bottom of pan about 1/4 inch deep. Add all of the potatoes to the pan, along with cut up bacon which hasn't been cooked yet; diced onions, parsley and salt and pepper.
- Cook on medium high heat, stirring and watching so that potatoes don't burn because they will stick to the bottom of pan as they are cooking and you will need to scrape them up as they are browning.
- You can cover the pan for the first 20 minutes of cooking and cook on low and then turn up the heat for the last 15 minutes or so in order to brown some of the potatoes.
- Good with steaks and a salad.
- Estimated on servings time to make.
