PASSOVER CHEESE QUICHE



Passover Cheese Quiche image

This classic quiche can be made kosher for Passover and gluten free with the right crust. Follow the recipe for the perfect fluffy quiche filling.

Number Of Ingredients 12

1 (9-inch) kosher for Passover unbaked frozen pie crust, defrosted 15 minutes
1 tablespoon olive oil
1 small onion, finely diced
1 cup whole milk
4 large eggs
1 large egg yolk
½ teaspoon kosher salt
½ teaspoon cayenne pepper
¼ teaspoon freshly ground black pepper
¾ cup cheddar sliced cheese
¾ cup mozzarella sliced cheese
½ cup whipped cream cheese

Steps:

  • Preheat oven to 400℉. Prick bottom of defrosted piecrust all over with a fork. Bake 20 to 25 minutes or until light golden brown. Remove from the oven and cool while making the filling. Reduce oven to 350℉. Heat olive oil in a small skillet over medium high heat. Sauté onion for 5 to 8 minutes or until slightly softened. Set aside. In a medium bowl, combine milk, eggs and yolk and whisk vigorously. Add salt, cayenne and pepper and whisk. Add onions and cheeses and stir to combine. Pour into cooled crust and use a spoon to make sure cheese is evenly distributed throughout the shell. Carefully place in the oven and bake 40 to 42 minutes or until the crust is golden brown and filling is set. If edges of crust begin to darken too quickly, cover with foil. Cool 15 minutes before slicing.

Pie crust 1 (9-inch)
Olive oil 1 tbsp
Onion 1
Whole milk 1 cup
Large eggs 4
Egg yolks 1
Kosher Salt ½ tsp
Cayenne pepper ½ tsp
Black pepper ¼ tsp
Cheddar cheese ¾ cup
Mozzarella ¾ cup
Cream Cheese ½ cup

Steps:

  • Preheat oven to 400 °F.
  • Using a fork, prick the bottom of the pie crust all over.
  • Bake the crust for 20-25 minutes until it is a light golden brown color. Remove the crust from the oven and leave to cool.
  • Turn the oven heat down to 350 °F.
  • Heat the olive oil in a small pan or skillet over medium high heat. Cook the onion for 5-8 minutes until soft.
  • Whisk the milk, eggs and yolk together in a bowl. Add the salt, cayenne and pepper and continue to whisk until full incorporated.
  • Add the onions, cheddar, mozzarella and cream cheese to the egg filling and stir well to combine.
  • Carefully pour the filling into the cooled pie crust. Make sure the cheese is evenly spread out in the filling.
  • Bake the quiche for 40-42 minutes until the filling is set and the crust is a golden brown color.
  • Serve warm with a crisp green salad on the side.

Another inexpensive dish for Passover with whatever fresh or frozen vegetables you have around. In my family, we make two kinds of dishes for Passover: all kinds of chicken recipes and all kinds of vegetable recipes. It's definitely alot healthier. When it comes to paprika and garlic powder always err on the side of taste. In the ingredient list I added what I used, but you can add or decrease as much as you like.

Number Of Ingredients 9

3 large tomatoes
2 cups frozen mixed vegetables (broccoli, cauliflower, carrots, yellow zucchini)
1 1/2 cups salami, cubed
2 matzos, crumbled
1/2 cup matzo meal
4 eggs, beaten
1 1/2 teaspoons paprika
1 1/2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat oven 375°F
  • Grease 9 inch pie pan. Mix crumbled matzo and matzo meal together and use it as a base in the pie pan.
  • In a large bowl add the vegetables and salami. Mix in the beaten eggs, and then add seasonings.
  • Bake in oven 30 minutes, or until ready. Serve warm.
