1/3 cup white onions, finely chopped
3 to 4 serrano chiles, finely chopped, with seeds
1 teaspoon coarse salt
2 pounds ripe California avocadoes (about 4 large)
2 to 3 tablespoons fresh lime juice
3/4 cup pear, peeled and finely diced
3/4 cup seedless grapes, halved
3/4 cup pomegranate seeds
Special Equipment
molcajete y tojolote_ (mexican mortar and pestle) or food processor

Steps:

  • In a molcajete or food processor, grind onion, chiles, and salt into a rough paste. Gradually add the avocado, coarsely mashing it (you'll want it to be chunky). Stir in the lime juice. Fold in the pear, grapes, and 1/2 cup of the pomegranate seeds. Sprinkle remaining 1/4 cup pomegranate seeds over the guacamole and serve.

1 pomegranate, skin and light-colored membrane removed
1 tablespoon fresh lemon juice
2 tablespoons light brown sugar
¼ teaspoon ground nutmeg
½ teaspoon ground cinnamon
2 tablespoons finely chopped almonds
4 sprigs fresh mint leaves for garnish

Steps:

  • Place the sliced pears and pomegranate seeds into a bowl. Toss with lemon juice to coat. Combine the brown sugar, nutmeg, and cinnamon in a small cup or bowl, then mix into the fruit. Cover and refrigerate for at least 1 hour before serving to blend the flavors. Serve in individual dishes, and garnish with a sprinkling of chopped almonds and a sprig of mint.

2 cups plain Greek yogurt

  • Combine oats, apple juice, and 1/2 cup water in a large bowl; cover and chill overnight. Mix yogurt into soaked oats. Divide mixture among bowls and, dividing evenly, top with pomegranate seeds and almonds. Drizzle with honey, if desired.

I made this up last night and it was terrific! The pomegranate juice gives just enough sweetness, but still allows the pear flavors to shine through. This could also be turned into a martini by using 1.5 oz of each ingredient and serving without ice. Hope you enjoy!

A fall and winter favorite--I am always eager for pomegranates to come in season so I can make this again. I make my own pomegranate juice by pressing the seeds against a metal sieve.

3 cups green leaf lettuce, rinsed and torn
1 Bartlett or Anjou pear
⅓ cup pomegranate seeds
1 tablespoon vegetable oil
2 tablespoons pomegranate juice
1 tablespoon lemon juice
1 teaspoon prepared Dijon-style mustard
½ tablespoon honey
ground black pepper to taste

Steps:

  • Divide the lettuce between two bowls. Halve and core the pear, then cut each half in slices. Divide the pear slices and pomegranate seeds among the two bowls and mix gently.
  • Combine the vegetable oil, pomegranate juice, lemon juice, mustard, honey, and pepper in a saucepan. Bring to a boil over high heat; reduce heat and simmer, stirring frequently, until the dressing thickens slightly, about 2 minutes. Pour the warm dressing over the salads and serve.

I love this muesli variation... perfect for these winter fruits. Pears aren't so hard, but I'm always seeking another way to use pomegranates! ("Cook" time is really soak time.)

1/3 cup rolled oats
1 -2 dates, chopped (I use the very sweet honey date- if you have regular dates, you may want 2)
1/2 teaspoon orange peel, grated
1/4 teaspoon cinnamon (a generous sprinkle)
2/3 cup vanilla-flavored soymilk
1/2 pomegranate
1/2 medium pear (medium ripeness)

Steps:

  • Combine the first four ingredients in a bowl, and stir together. Add the soymilk. Make sure all the oats are covered by milk.
  • Let this refrigerate overnight. In the morning, remove the arils from the pomegranate (I leave the method to your choice- how do YOU get the inside out?!) and dice the pear. Gently fold them into the muesli.
  • Enjoy!
