GHANAIAN CORNED BEEF STEW
Steps:
- 1. Heat up the oil in a large saucepan, add the onions, chopped garlic and stir util slightly browned. Now add the cayenne pepper,tomato sauce and then tomato paste.
- 2. Stir mixture until smooth then add broth, stir again, cover, and set to medium-low heat stirring frequently for about 10mins...now add lawrys seasoning, garlic powder, onion powder.....stir again
- 3. Let simmer for another 10mins...keep your eye on it...now add the corned beef and stir again...let simmer for another 5mins... *Optional*...add 3eggs lightly beaten into the mixture, stir lightly and let the egg fry up into the mixture for 5 quick minutes...and Voila an official Ghanaian delicacy.. Best served on a hot bed of Jasmine Rice or with boiled cutup white Potatoes..Enjoy

- Boil beef with salt, pepper and some chopped onions in a medium pot until tender. It will take approximately 30 minutes or more, depending the cut of beef and how you like your beef cooked. I sometimes use the pressure cooker to shorten the process. Reserve the stock for later use.
- Add 1 cup oil to the pot/pan and brown the beef for about 5-10 minutes. Remove and set aside.
- In a blender, blend the onions, tomatoes, garlic, parsley, celery, thyme, basil and scotch bonnet pepper
- Gently pour the blend of puree ingredients, and tomatoes puree in the saucepan, add curry powder, white pepper , smoked paprika and bouillon powder bring to a boil, reduce heat and simmer for about 30 minutes.

- Blend the scotch bonnets, bell pepper, tomatoes and onion. You can blend peppers in a combination that suits you. The peppermix gives you about 600-800ml of blended pepper.
- Add sunflower oil in a pot. When this heats up, add the blended peppers, multipurpose seasoning and stock cube. Leave to cook for 10 minutes.
- Add the corned beef, stir in the stew and leave to cook for five minutes. Stir intermittently to avoid burning.
