Creamy Mashed Potatoes with Cabbage image

I gave colcannon a spin by cooking it all in just one pot, and even going so far as to making the whole thing dairy free!

1/2 cup olive oil (divided)
1 medium onion (chopped)
1 clove garlic (smashed and peeled)
1 small head savoy cabbage (cut into 1 inch pieces)
2 teaspoons kosher salt
1 pound Yukon gold potatoes (peeled and quartered (about 3 to 4 large potatoes))
3 1/2 - 4 cups chicken broth (homemade preferred)
2 tablespoons chopped chives

Steps:

  • This recipe originated on an episode of Giada Entertains. Episode: Go Green or Go Home.
  • Heat a medium dutch oven over medium heat. Add 1/4 cup of olive oil to the pan along with the chopped onion and smashed garlic. Season with 1/2 teaspoon and salt. Cook the onions slowly, stirring often with a wooden spoon, until they are soft and tender, about 8 minutes. Add the chopped cabbage and an additional 1/2 teaspoon salt and stir to combine. Cook for 2 minutes or until the cabbage wilts. Stir in the potatoes and the enough broth to cover the mixture. Season with the remaining salt. Bring the mixture to a simmer and cook stirring often until the liquid is reduced by half, the potatoes are tender and the cabbage is silky and soft, about 30 - 35 minutes. Using a potato masher or a whisk, crush the mixture until it loosely resembles the consistency of mashed potatoes. Stir in the additional 1/4 cup of olive oil and serve sprinkled with chives.

2 1/2 pounds Yukon Gold potatoes, peeled and quartered
3 sprigs fresh rosemary
2 cloves garlic, peeled and smashed
Kosher salt
1 1/2 cups heavy cream, warmed
1/4 cup extra-virgin olive oil
16 ounces fresh mozzarella, shredded
1 cup grated Parmesan

Steps:

  • Place the potatoes, rosemary and garlic in a large saucepan and cover with cold water. Add a handful of salt and bring to a boil over medium-high heat. Boil until fork-tender, about 15 minutes. Drain well and remove the rosemary sprigs.
  • Working over the same saucepan, press the potatoes and garlic through a potato ricer. Add the warmed cream and olive oil. Place the pan back over low heat and stir everything together using a rubber spatula. Add the mozzarella, Parmesan and 1/2 teaspoon salt and continue to stir until the mixture is hot, the cheese is melted and the potatoes are almost stringy in texture--this will take 5 to 10 minutes. Serve hot.

4 pounds russet potatoes, peeled, cut into 1-inch pieces
1 stick butter, melted plus 1 tablespoon at room temp
1 cup whole milk, at room temperature
1 1/2 cups shredded mozzarella
1 cup freshly grated Parmesan, divided use
8 oz pancetta, diced, cooked and drained of excess oil
Salt and freshly ground black pepper
1/4 chopped fresh flat leaf Italian parsley
2 tablespoons plain dry bread crumbs

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with the 1 tablespoon of room temp butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well with a potato masher. Mix in the melted butter and milk. Mix in the mozzarella, 3/4 cup of the Parmesan and pancetta. Season, to taste, with salt and pepper and add in parsley. Transfer the potatoes to the prepared baking dish. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend. Sprinkle the bread crumb mixture over the mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill.
  • Bake, uncovered, until the topping is golden brown, about 20 minutes.

1 tablespoon unsalted butter, at room temperature

4 pounds russet potatoes, peeled, cut into 1-inch pieces
1 1/2 cups grated mozzarella
1 cup whole milk, at room temperature
3/4 cup freshly grated Parmesan
1/2 cup (1 stick) unsalted butter, melted
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 cups frozen peas, thawed
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 tablespoons plain dry breadcrumbs
Extra-virgin olive oil, for drizzling

Steps:

  • Preheat the oven to 400 degrees F. Butter a 13- by 9- by 2-inch baking dish. Set aside.
  • For the potatoes: In a large saucepan, combine the butter, salt and potatoes. Add enough cold water to cover the potatoes by 1 inch. Bring to a boil over medium-high heat. Boil until the potatoes are very tender, about 15 minutes. Drain the potatoes and return them to the same pot. Using a potato masher, mash the potatoes until smooth. Mix in the mozzarella, milk, Parmesan and butter. Season with salt and pepper. Transfer the potatoes to the prepared baking dish.
  • For the peas: In a medium skillet, melt the butter over medium heat. Add the thawed peas and cook until heated through. Add the salt and pepper.
  • Using a large spoon, make a 4-inch well in the center of the potatoes and fill with the cooked peas.
  • For the topping: Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the breadcrumb mixture over the mashed potatoes (can be prepared up to this point 6 hours ahead of time; cover and chill).
  • Drizzle the top with olive oil and bake until the topping is golden brown, about 20 minutes.

This is another wonderful recipe from Giada. She made this to accompany a chicken dish but it could really compliment many meats. This recipe can be made ahead and reheated the next day.

2 lbs new potatoes (red and or or yellow)
1 lb white pearl onion (use cippolini onions if you can get them)
1/4 cup extra virgin olive oil
2 teaspoons dried rosemary
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 400°F.
  • Scrub and halve or quarter potatoes, depending on size.
  • Peel onions.
  • Toss all ingredients together in a large bowl.
  • Spread the mxture in a single layer on a baking sheet.
  • Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes.
  • Serve immediately or cool and store in the refrigerator to reheat the next day in a preheated 400F oven for 10 to 15 minutes.
  • Enjoy!
