- Combine all ingredients in a non-reactive dish and cover tightly. Allow olives to marinate at least 2 to 3 hours or up to 4 days in the refrigerator. (If you are only marinating them for a few hours, leave the olives in the marinade at room temperature.)
- Note: These olives are great in martinis and also double as a quick party hors d'oeuvre. If you plan on using them exclusively as an hors d'oeuvre, drizzle a little extra-virgin olive.

MARTINI SOAKED OLIVES

- In a cocktail mixer, vigorously shake the vodka and vermouth. Drain the brine from the jar of olives and reserve 1/4 cup of the brine. Fill the jar with the reserved brine, vodka and vermouth until full. Marinate for at least 24 hours and up to 1 month, then serve.

This is my step-dad's recipe, which is incredible with beef tenderloin steaks or even less expensive cuts of meat like flank steak. The best part is, you can use it as a basting sauce while grilling.

- To make the marinade whisk the sugar, ginger, garlic, gin, and soy sauce together in a small bowl. To use the marinade, marinate small cuts of meat 3 to 4 hours, and larger ones 8 hours to overnight, turning meat occasionally.

MARINATED BALSAMIC OLIVES
These are just like the marinated olives that you purchase in the European markets...if not better. They will stay forever in the fridge. This recipe makes quite a lot of olives (6 cups), but can be scaled down in half if desired....note: plan ahead, these olives need to stay in the fridge for at least 8 hours (the more time left marinating in the fridge, the stronger the flavor will be). Prep time includes the 8 hour refrigeration marinating time.
