GIN AND TONIC JELLIES

1 teaspoon gelatin
5 ounces tonic water
1 1/2 ounces gin
2 teaspoons lime juice
Small wedges lime, key lime, or other small citrus

Steps:

  • Pour about half the tonic into a bowl. Scatter the gelatin over the surface, do not stir, set aside until the gelatin blooms (softens). Meanwhile, warm the rest of the tonic over very low heat until just simmering. Whisk hot tonic, then gin and lime juice into the gelatin. Pour jelly into 4 (2- ounce) shot glasses and garnish with lime wedges or citrus of choice. Place in the refrigerator for 2 hours (or overnight) until set.

6 slices of cucumber
6 mint leaves
75ml gin
250ml tonic
50g caster sugar

Steps:

  • Take a six-hole lolly mould and push a cucumber slice and a mint leaf into each one. In a jug, stir the gin, tonic and sugar until the sugar dissolves and the tonic loses its fizz. Divide between the moulds, push in the lolly sticks and freeze for at least 4 hrs, or preferably overnight.

For the adults, this is a dessert and after-dinner drink all rolled into one. This recipe makes enough for large ice pop molds. It's tempting to add more gin but keep in mind that they will not freeze properly if you do. These are sure to be a hit at your next barbecue!

1 (12 fluid ounce) can or bottle tonic water
4 tablespoons white sugar
3 tablespoons gin
1 lime
24 blackberries, cut in half

Steps:

  • Combine tonic water and sugar in a small saucepan and bring to a boil over medium-high heat. Boil for 2 minutes and remove from heat. Stir in gin and let cool while you assemble the ice pops.
  • Cut lime into 6 slices. Cut each slice in half. Place 2 pieces of lime in each mold. Evenly divide berries among the molds.
  • Pour tonic water mixture into the molds through a funnel, leaving a 1/2-inch space on the top. Freeze for 8 hours, or overnight.
