12 ounces lean flank steak, trimmed
1 ½ teaspoons cornstarch
1 tablespoon reduced-sodium soy sauce, divided
1 teaspoon dry sherry plus 1 Tbsp., divided
1 teaspoon vegetable oil plus 1 Tbsp., divided
4 teaspoons hoisin sauce
4 teaspoons ketchup
1-3 teaspoons chile-garlic sauce or Sriracha
3 slices peeled ginger, smashed
1 small yellow onion, thinly sliced
1 cup diced green bell pepper (1-inch)
1 cup diced red bell pepper (1-inch)
2 tablespoons unsalted beef broth

Steps:

  • Cut beef with the grain into 2-inch-wide strips. Cut each strip across the grain into 1/4-inch-thick slices. Combine the beef, cornstarch, 1½ tsp. soy sauce, and 1 tsp. sherry in a medium bowl; stir until the cornstarch is no longer visible. Add 1 tsp. oil and stir until the beef is lightly coated.
  • Combine hoisin sauce, ketchup, chile-garlic sauce (or Sriracha) to taste, and the remaining 1½ tsp. soy sauce and 1 Tbsp. sherry in a small bowl. Set aside.
  • Heat a 14-inch flat-bottomed carbon-steel wok (or a 12-inch stainless-steel skillet) over high heat until a drop of water vaporizes within 1 to 2 seconds of contact. Swirl in the remaining 1 Tbsp. oil. Add ginger and stir-fry until fragrant, about 10 seconds. Push the ginger to the sides of the pan and add the beef in an even layer. Cook, undisturbed, until the beef begins to brown, about 1 minute. Add onion and, using a metal spatula, stir-fry until the beef is lightly browned but not cooked through, 30 seconds to 1 minute more. Transfer the beef and onion mixture to a plate.
  • Add green and red peppers and broth to the pan. Cover and cook over high heat until the peppers are bright green and red and almost all the liquid has been absorbed, about 1 minute. Return the beef and onion and any accumulated juices to the pan. Add the reserved sauce and stir-fry until the beef is just cooked through and the peppers are tender-crisp, 30 seconds to 1 minute. Remove the ginger, if desired.

Steps:

  • Mix 1 tablespoon cornstarch, water and salt; toss with beef. In a small bowl, mix broth, soy sauce, sugar, orange zest and remaining cornstarch until smooth., In a large skillet, heat 2 teaspoons oil over medium-high heat; stir-fry half of the beef until browned, 2-3 minutes. Remove from pan. Repeat with additional 2 teaspoons oil and remaining beef., Stir-fry carrots in remaining oil 2 minutes. Based on Miraklegirl's "Crispy Ginger Beef" (recipe #107072). I modified her recipe based on the ingredients I had on hand. The sauce turned out really yummy, so I'm posting my version here for safe-keeping. (My husband and I aren't huge stir-fry fans, so now that I've found a recipe we both enjoy I'd better not lose it...) Of course, the meat and veggies can be substituted for whatever you have handy (or make it meatless if you want).

250 g stir-fry beef
1/2 cup cornstarch
1/2 cup water
3 large mushrooms, sliced
1 red pepper, sliced
3 stalks celery, sliced
1 cup baby carrots, cut into matchstick pieces

2 teaspoons garlic, minced
1 tablespoon canola oil
2 1/2 tablespoons soy sauce
4 tablespoons red wine vinegar
1/2 cup brown sugar

Steps:

  • Note, because this cooks pretty fast, have all your measuring, chopping, etc done beforehand. Also, if you are planning on serving it on rice or noodles, they should be ready or almost-ready when you begin stir-frying.
  • Combine cornstarch and water in a medium bowl. Add beef strips & toss to coat.
  • Heat oil in wok or large skillet (on high heat). Toss in beef and stir-fry until cooked (3-5 minutes or so). Remove and set aside.
  • Put veggies, garlic & ginger in the pan & stir-fry for about 5 minutes or so.
  • Combine soy sauce, vinegar, brown sugar & cayenne pepper; add to pan.
  • Bring to a boil, then add the cooked beef.
  • Continue to stir-fry until heated through. Top with sesame seeds.

1/2 cup reduced-sodium beef broth
3 tablespoons reduced sodium soy sauce
2 1/2 teaspoons cornstarch

1 1/2 lbs fresh asparagus spears, trimmed or 3 cups small broccoli florets
1/2 cup sliced fresh mushrooms

Steps:

  • Partially freeze beef for easier slicing. Trim fat from beef. Thinly slice beef across the grain into bite-size strips. Set aside. If using asparagus, cut asparagus into 2-inch pieces. Set aside.
  • In a small bowl stir together the beef broth, soy sauce, cornstarch, sugar, and ginger; set aside.
  • Lightly coat an unheated wok or large skillet with nonstick cooking spray. Preheat over medium-high heat. Add asparagus or broccoli, mushrooms and green onions. Stir-fry for 3 to 4 minutes or until vegetables are crisp-tender. Remove from wok or skillet.

500g beef rump, trimmed and cut into thin strips
1 tsp Chinese five-spice powder
300g pack ready-cooked rice noodle
1 large red chilli
1 fat garlic clove , chopped
4cm piece ginger , peeled and cut into matchsticks
1 stick lemongrass , trimmed and sliced
2 tbsp sunflower oil
100g sugar snap peas , cut into thin strips
8 baby corn , sliced diagonally
6 spring onions , trimmed and sliced diagonally
½ lime

Steps:

  • Mix the beef and five-spice in a bowl, then set aside to marinate. Soften the noodles in boiling water following pack instructions, drain then set aside. Thinly slice the red chilli, leaving the seeds if you prefer a little extra heat. Mix with the garlic, ginger and lemongrass in a small bowl. Heat half the oil in a wok, add the chilli mixture and stir-fry for 1 min until softened but not coloured. Remove with a slotted spoon and set aside while you cook the beef.
