GRILLED SLAW WITH GINGER AND SESAME

Grilled Slaw With Ginger and Sesame image

Napa makes an excellent cabbage for grilling. Its elongated shape provides greater surface area to char - and thus smoke - over a hot fire than a round cabbage. Its leaves are less tightly packed than conventional cabbage, allowing for deep penetration of the smoke flavor. Also known as Chinese cabbage, napa cabbage is native to China and pairs well with Asian seasonings, such as sesame oil, rice vinegar and ginger. To notch up the heat, add a spoonful of Asian chile paste.

Time 30m

Yield 6 servings

Number Of Ingredients 14

Canola or grapeseed oil, for brushing the grate
1 head napa cabbage (about 2 pounds)
1 Asian pear
2 scallions
2 to 3 tablespoons sesame oil, plus 3 tablespoons for the dressing
Sea salt and freshly ground black pepper
1 red bell pepper
2 jalapeños
2 tablespoons granulated sugar, plus more to taste
1 tablespoon minced fresh ginger
1 garlic clove, minced
2 tablespoons rice vinegar, plus more to taste
2 tablespoons black or toasted white sesame seeds (optional)
1 teaspoon Chinese or Vietnamese chile paste (optional)

Steps:

  • Light your grill, building a hot fire and set it up for direct grilling. Brush or scrape the grill grate clean and grease it with a tightly folded paper towel dipped in canola oil.
  • Meanwhile, cut the cabbage lengthwise into quarters through the core. Cut the pear in half lengthwise and scoop out the seeds. Lightly brush the cabbage, pear and scallions all over with 2 to 3 tablespoons sesame oil and season with salt and pepper.
  • Grill the cabbage until darkly charred on all sides, 2 to 3 minutes per side. Char just the outside; the inside should remain cool, firm and crisp. Transfer to a sheet pan to cool.
  • Grill the cut sides of the pear until grill-marked, 2 to 3 minutes per side. Grill the scallions, bell pepper and jalapeños until grill-marked, turning halfway through, about 4 minutes. Transfer to the sheet pan. Let the vegetables cool to room temperature.
  • Make the dressing: In a large bowl, mash together the sugar, ginger and garlic with 1/2 teaspoon each salt and pepper. Add the rice vinegar and whisk until the salt and sugar are dissolved. Whisk in the remaining 3 tablespoons sesame oil, plus the sesame seeds and chile paste, if using.
  • Cut away and discard the core of each cabbage quarter, then thinly slice the charred cooled napa cabbage crosswise, and add it to the dressing. Julienne the pear, bell pepper and jalapeño and add them to the slaw, discarding the bell pepper and jalapeño seeds. Thinly slice the scallions crosswise, discarding the root ends, and add them as well.
  • Taste the slaw for seasoning, adding more vinegar, sugar and salt to taste. Refrigerate until serving and serve within a couple hours of mixing.

GRILLED ASIAN FLANK STEAK WITH SWEET NAPA SLAW

Grilled Asian Flank Steak With Sweet Napa Slaw image

This is from Bon Appetit. I love flank steak and often make it marinated with equal parts soy sauce, vinegar and oil and then grill after 24 hours. This is a nice variation and the slaw is good too!

Provided by Little Suzy Homemak

Categories     Steak

Time 1h

Yield 4 serving(s)

Number Of Ingredients 10

1/4 cup soy sauce
5 tablespoons vegetable oil
5 teaspoons minced peeled fresh ginger, divided
1 garlic clove, pressed
1 1/2 lbs flank steaks
3 tablespoons sugar
3 tablespoons seasoned rice vinegar
2 red jalapenos, thinly sliced into rounds
5 cups thinly sliced napa cabbage
3/4 cup chopped green onion, divided

Steps:

  • Mix soy sauce, oil, 3 teaspoons ginger and garlic in a resealable plastic bag. Add flank steak and seal bag; turn to coat. Marinade for 30 minutes to overnight as desired. Let stand at room temperature 30 minutes before grilling.
  • Stir sugar and vinegar in a small saucepan over medium heat until sugar dissolves; remove from heat. Add jalapenos and remaining 2 teaspoons ginger. Place cabbage and 1/2 cup green onions in a medium bowl. Pour vinegar mixture over and toss to coat. Season with salt and pepper. Let stand while grilling steak, tossing occasionally.
  • Grill steak over medium heat BBQ until cooked to desired doneness, about 6 minutes per side for medium-rare. Transfer to work surface. Let rest for 10 minutes. Slice steak thinly against the grain. Serve with slaw and sprinkle 1/4 cup green onions over all for garnish.

NAPA CABBAGE 'STEAK'

Napa Cabbage 'steak' image

Provided by Nobu Matsuhisa

Categories     main course

Time 45m

Yield 6 servings

Number Of Ingredients 8

1 large head Napa cabbage
Sea salt
3 tablespoons extra virgin olive oil
1 tablespoon yuzu juice or lemon juice
1 1/2 teaspoons soy sauce
2 tablespoons grapeseed oil
6 ounces shiitake mushrooms, stems removed, or thick slices of portobello mushrooms
1 tablespoon bonito flakes

Steps:

  • Slice off bottom inch of cabbage at stem end. Remove one layer of leaves and discard. Carefully remove remaining leaves until you get to smaller central ones. Reserve smaller leaves for another use. You should have about 12 large leaves.
  • Place one leaf on work surface. Top with another leaf facing the opposite direction, that is, with cut end at leafy end. Dust with pinch of sea salt. Continue stacking leaves, alternating their direction, and dusting every second leaf with salt. Place stack four inches from end of a 16-inch sheet of foil. Lift end of foil over stack of leaves and tightly roll, wrapping the foil as you go. Be careful that foil is wrapped around only the outside of cabbage roll. Tightly tie roll with butcher's cord at 1 1/2- to 2-inch intervals. You should be able to make 6 ties. Use large knife to slice about 1/2 inch from ends of roll, so cut sides are smooth. Then slice roll in sections between cord. You should have 6 thick rounds of cabbage, each wrapped in foil and tied.
  • Preheat oven to 250 degrees. Heat 1 tablespoon olive oil in skillet large enough to hold rolls, a cut side down, in single layer. Cook rolls over medium-low heat until lightly browned on bottom and steam rises from center, 5 to 8 minutes. Turn rolls and cook on other side until lightly browned. Remove rolls to baking dish and place in oven.
  • While cabbage is cooking, mix yuzu juice, soy sauce and grapeseed oil together and set aside.
  • Place remaining olive oil in skillet. Add mushrooms and sauté over medium-high heat until softened and lightly browned. Remove from heat. If not serving dish immediately, place mushrooms in small baking dish in oven to keep warm.
  • To serve, remove cabbage from oven and, keeping rolls standing on a cut side, transfer to serving dish or put each on a salad plate. Snip cords and carefully remove foil. Cabbage rolls should hold together neatly. Sprinkle cabbage rolls with bonito flakes. Toss mushrooms with yuzu mixture, place a few mushroom pieces on top of each cabbage roll and serve.

GINGERED STEAK AND NAPA CABBAGE SALAD

Gingered Steak and Napa Cabbage Salad image

Categories     Gourmet

Number Of Ingredients 19

For marinade
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
1 tablespoon red-wine vinegar
1 tablespoon grated peeled fresh gingerroot
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/4 teaspoon dried hot red pepper flakes, or to taste
two 1-inch-thick filets mignons (3/4 pound), any fat trimmed
2 teaspoons vegetable oil
1/2 pound fresh shiitake mushrooms, stems discarded and caps sliced
1/2 teaspoon salt
1/4 cup water
1 tablespoon honey
1 small Napa cabbage (about 1 1/2 pounds), trimmed and sliced thin crosswise
1 cup packed >I/I
1 medium red bell pepper, cut into thin strips
1 Asian pear or firm-ripe Bosc pear, cut into 1/4-inch julienne strips
2 scallions, sliced thin
1/2 cup packed fresh coriander sprigs

Steps:

  • Make marinade:
  • In a shallow bowl stir together marinade ingredients.
  • Add filets to marinade, turning to coat, and marinate at room temperature 15 minutes. Remove filets from marinade, letting excess drip off, and reserve marinade. In a 10-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté filets about 4 minutes on each side for medium-rare meat. Transfer filets to a cutting board.
  • In any drippings remaining in skillet cook mushrooms with salt, stirring frequently, until golden, about 3 minutes. Add reserved marinade, water, and honey and bring to a boil. Remove skillet from heat and cool mixture 10 minutes.
  • In a large bowl combine cabbage, mizuna or arugula, bell pepper, pear, scallions, and all but 4 sprigs coriander. Add mushroom mixture and toss to coat. Cut filets into thin slices. Mound cabbage mixture on 4 dinner plates and arrange steak slices on top. Garnish with reserved coriander sprigs.
