This is a traditional Chinese dessert. My husband loves it. My dad passed this recipe on to me and I want to share it with you!

- Peel and grate ginger. Squeeze grated ginger pieces to release juice; measure 2 teaspoons ginger juice and transfer to a bowl.
- Place milk in a saucepan; heat until temperature reaches 160 degrees F to 170 degrees F (71 degrees C to 77 degrees C), about 5 minutes. Add sugar and stir until dissolved; pour into the bowl with ginger juice. Stir mixture immediately and cover with a small plate. Cover the covered bowl with a clean towel; let sit for at least 7 minutes.

- 1.) Put all of the ingredients *(except the honey)* in a saucepan and stir frequently over medium heat, let it boil 2-3 times until a creamy milk layer forms on the top and the milk lessens to 1 cup. 2.) Add the honey into the glass, pour in the boiled milk. Serve hot before bed.

- Bring the water and ginger to a boil in a small pot. Once it is boiling, turn off the heat.
- Stir in tea and cover. Let stand 3 to 5 minutes.
- Stir in milk and sugar, and add more sugar if needed.
- Pour the mixture through a sieve into a large (6-cup) blender, discarding the solids.
- Blend the mixture until foamy (use caution when blending hot liquids), then pour into mugs. Serve immediately.

TURMERIC GOLDEN MILK RECIPE
Golden milk or turmeric milk is one of my favourite drinks during the cold season. Usually it is prepared with turmeric powder and other spices, such as cinnamon and ginger. However, I make my golden milk recipe with fresh turmeric root and ginger.

- In a small saucepan, bring water to boil, add turmeric and ginger root slices and simmer covered for 10 minutes. Strain the ginger and turmeric tea into a mug and add a dash of black pepper.
- Now, heat up soymilk, but don't bring it to boil. Pour it into a French press or a press mug. Then pump the plunger up and down fast (along with the filters) until the milk becomes foamy. Alternatively use a milk frother, if you have one.
- Then, heat up oat milk as well and pour it into ginger turmeric tea along with the coconut milk. Also, add a pinch of sea salt, if necessary (I find it brings out the flavours).
- Finally add the frothed soymilk and some sweetener, if necessary.
GINGER SHRIMP IN COCONUT MILK
