2 pound sweet potatoes
2 tablespoon butter, softened
2 teaspoon mccormick® all natural pure vanilla extract
1 teaspoon mccormick® ground ginger
1/4 teaspoon sea salt from mccormick® sea salt grinder
1/4 teaspoon mccormick® thyme leaves

Steps:

  • Pierce each sweet potato twice with fork so excess steam can escape while cooking.
  • Microwave on HIGH 5 to 10 minutes or until tender, turning over halfway through cooking.
  • Let stand 5 minutes or until cool enough to handle.
  • Remove skin from the sweet potatoes.
  • Place sweet potatoes and remaining ingredients in large bowl.
  • Mash until smooth and well blended.
  • Serve immediately.

10 cups peeled and cubed sweet potatoes (about 6 potatoes)
1/2 cup heavy whipping cream
1/2 cup orange juice
1 tablespoon brown sugar
1 teaspoon grated orange zest
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg

Steps:

  • Place sweet potatoes in a large Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Meanwhile, in a small saucepan, heat remaining ingredients until bubbles form around sides of pan; remove from heat., Drain potatoes; return to pan. Mash potatoes, gradually adding cream mixture.

A quick and healthy recipe for Mashed Sweet Potatoes with Ginger - a flavorful vegan side dish that pairs well with fish, chicken or vegan mains. Silky and luscious, these flavorful sweet potatoes can be made in under 30 minutes! Top with maple pecans for a little crunch.

2 lbs yams (or sweet potatoes) sliced into ½ inch thick disks, skin on
water
2 tablespoons coconut oil, butter, ghee, or olive oil
1 shallot, finely diced
2 teaspoons fresh ginger, grated or paste
2 garlic cloves, minced
1 teaspoon salt
pepper to taste

Steps:

  • Slice sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, cover with lid and simmer 12-15 minutes.
  • When the sweet potatoes are fork tender, drain, saving the water. In the same pot, heat olive oil, butter or coconut oil over medium heat and add shallots, ginger and garlic, stirring until fragrant and golden about 2-3 minutes.
  • At this point, you could add the sweet potatoes back into the pot and mash ( using a potato masher) adding some of the reserved sweet potato water to loosen it, or place it all in a food processor to whip until silky smooth.
  • I usually add about ½ cup liquid for a looser, almost saucy consistency. Season with the salt, pepper.
  • Top with maple pecans for a crunchy texture.

3 pounds sweet potatoes, peeled and cubed
½ cup honey
3 tablespoons grated fresh ginger
2 tablespoons walnut oil
1 teaspoon ground cardamom
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss together the sweet potatoes, honey, ginger, walnut oil, cardamom, and pepper. Transfer to a large cast iron frying pan.
  • Bake for 20 minutes in the preheated oven. Stir the potatoes to expose the pieces from the bottom of the pan. Bake for another 20 minutes, or until the sweet potatoes are tender and caramelized on the outside.

These quick and easy, vegetarian, Ginger Mashed Potatoes are a perfect side dish for fall and lovely for Thanksgiving! They're creamy, rich and packed with warm flavors.

3 pounds sweet potatoes
6 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons ginger pulp, (freshly grated (see notes))
2 teaspoons brown sugar
½ teaspoon ground cinnamon
6 tablespoons heavy cream
salt and freshly ground black pepper to taste

Steps:

  • Peel the sweet potatoes, and then cut them into bite-sized pieces, about 2-inch cubes.
  • Put a large steamer into a large pot with the water level just below it. Over high heat, bring the water to a boil and then add sweet potatoes to the rack. Turn the heat to low, cover, and steam until the sweet potatoes are very tender, about 15 minutes. (You can stick a fork into one of the pieces to see how tender they are -- it should easily slide right out when they're done.)
  • Add the sweet potatoes -- along with the butter, ginger, brown sugar, and cinnamon -- to a large mixing bowl and use a very large fork or potato masher to mash them. They can be as smooth or as chunky as you'd like -- mine are mostly smooth with a few chunks. (This must be done while they're still hot, so that the butter melts in nicely.)
  • Now mix in the cream and season to taste with salt and pepper. (Here's How.)

2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3 tablespoons honey
2 1/2 pounds sweet potatoes, cut into 1-inch chunks (about 6 cups)
1/4 cup Thai sweet chili sauce
1 teaspoon crushed red pepper flakes
2 dashes hot sauce
1/4 cup toasted pecans, chopped
3 scallions, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the olive oil in a large mixing bowl. Add the salt, pepper, cinnamon, ginger and 1 tablespoon of the honey and whisk to combine. Add the potatoes and toss to coat. Spread the potatoes on a baking sheet. Roast, stirring halfway though, until the potatoes are tender and the edges are crisp, 45 minutes to 1 hour.
  • Meanwhile, make the glaze: Put the chili sauce, red pepper flakes, hot sauce and remaining 2 tablespoons honey in a small saucepot. Set the pot over medium-high heat and cook, stirring, until the ingredients come together, about 2 minutes.
  • Pour the warm glaze over the potatoes on the baking sheet and toss to coat. Pour the glazed potatoes into a serving dish and sprinkle with the pecans and scallions. Serve warm.
