Steps:
- Gather the ingredients.
- Prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.
- In a 1 1/4-quart pot, add the water and ginger, and bring to a boil for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger.
- Remove it from the heat, strain, and add the lime juice and honey to taste. Enjoy your ginger tea.

Steps:
- Method 1: Rinse ginger under running water. If required soak it in a bowl of water to loosen the mud deposits and scrub it well with a vegetable brush.
- If you want you may peel the ginger with a table knife or a spoon. Do not peel the whole root, peel only an inch keeping the rest intact.
- Bring water to a rolling boil. Meanwhile grate or chop the ginger.
- Add to the boiling water. If you want to use spices and herbs add them too at this step.
- Simmer covered for 3 to 4 mins. If using chopped or sliced ginger boil for 5 to 6 mins.
- When the ginger tea is ready you will see it turns to a light yellow color. Turn off the heat and strain to a serving cup. Press down with a spoon to extract most of the ginger flavor. Stir in lemon juice.
- If you want to sweeten it add a tsp of honey when it cools down slightly. Do not stir in honey to very hot tea. If the tea is too spicy for your taste, simply dilute it with hot water.
- Method 2: You may also add ¼ teaspoon tea powder or tea leaves, ⅛ teaspoon ground cinnamon and a pinch of black pepper along with ginger. Follow the rest from above method 1.
- Method 3: To make Indian ginger tea, Boil 1 tsp ginger, 1 to 1.5 teaspoons tea leaves or tea powder in ¾ cup water for 3 to 4 mins. If you want you can also add tulsi or mint leaves. When the tea is boiling rapidly, pour ¼ to ⅓ cup milk and sugar to taste. Simmer for a while. Strain and drink. Avoid lemon in this adrak chai.

Delightful twist on hot tea. I was given this after having my third baby in the hospital. This tea helps with upset stomachs, nausea, and is just tasty.

GINGER-TURMERIC HERBAL TEA
If you are having trouble including these anti-inflammatory spices in your diet, here is an alternative to supplements. Actually quite tasty! I believe this tea is popular in Okinawa, Japan. Just remember turmeric stains. I make mine in an old mason jar, wrapped in an old tea towel! Turmeric is used for medicinal purposes in India.

EASY GINGER TEA
This is one of my absolute favourite things to drink, other than coffee and regular tea, that is! It's so easy, and it's good for you, too! You can buy ginger tea in packets, but it's better (and cheaper, too) to just make your own with fresh ginger. Thanks to Cdn Living Magazine for the original recipe I based this on!

Steps:
- Place grated ginger into a 2-cup glass measuring cup.
- Fill to the 1-1/2 cup line with boiling water.
- Set timer for 10 minutes.
- When timer goes off, strain into a large mug and stir in sugar (you may need more or less, depending on how sweet you want your tea).
- Taste; if it's too strong (too gingery) for you, add a little more boiling water to your mug, but I found the strong taste really grew on me, so I hope you try it this way first!
- Sip and enjoy!
- Note#1: If that's too much, you can use just 1 tsp grated ginger and just 1 cup of boiling water, but I like a big mug.
- Note#2: a squeeze of lemon can be added, and maple syrup is an interesting replacement for the white sugar.
- Note#3: If you triple or quadruple this recipe, you can make a lovely pot of ginger tea instead of a single serving.
